Peach Crumble

Last week Adam and I were craving something sweet so I decided to make a variation of the blueberry crumble I made a couple weeks ago! Here's the recipe with the new ingredients! I have to be honest, this peach version was my favorite thing I've ever made. It was so sweet and warm and gooey and delicious. Even a non-paleo eater will love it, I promise. 

Ingredients: 
  • 3 fresh peaches
  • juice of 1 lemon
  • 1 cup almond flour
  • 1/4 cup chopped pecans (I used a food processor this time) 
  • 1/4 cup melted coconut oil
  • 2 tablespoons maple syrup
  • 1/4 teaspoon cinnamon
  • 2 pinches of sea salt
How to make: 
  1. Preheat oven to 375. 
  2. Place peaches in a 9x9 dish and squeeze the juice of half of the lemon over the peaches
  3. In a mixing bowl, combing the almond flour, pecans, melted coconut oil, juice of half of the lemon, maple syrup, cinnamon and salt. 
  4. Spread the topping over the peaches. Back until fruit is well cooked and topping is golden brown (about 30 minutes) 
Fresh peaches with lemon juice! 
The food processor was the best way to make the nuts small and made the crust taste better 
I made a little extra mixture to have more a crunchy topping! 
The finished product! All warm and bubbly! 
Oh boy.
