Beef Barbacoa Bowls

Lexi over at Lexi's Clean Kitchen did it again! We made these the other day and loved every ounce of it. They were so easy, SO delcious and so tender. We just ate the meat with some veggies, but these would be amazing as tacos, over rice, in a burrito. I would pretty much eat it anyway possible! Plus cooking in a crock pot is good in my book! Enjoy! 

Ingredients
  • 2 1/2 pound beef shoulder
Rub Ingredients: 
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 teaspoon sea salt
  • 1 teaspoon garlic granules (I didn't have these so I left them out) 
  • 1 teaspoon onion powder
  • 1 teaspoon oregano 
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground pepper
Sauce Ingredients: 
  • 1 14 ounce jar diced tomatoes
  • 1 4 ounce container hot green chilies
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon sea salt
  • 1 teaspoon cumin
  • 2 teaspoon paprika
How to Make
  1. Put broiler on high
  2. In a bowl, combine rub ingredients
  3. Press into beef shoulder on all sides
  4. Broil for 4 minutes on each side
  5. While in oven, combine all sauce ingredients in your slow-cooker
  6. Once beef is done in oven, place into crock pot and set on low for 7-8 hours (due to work, ours was in there for about 9 hours) 
  7. Once done, assemble with anything you want! Fried plantains, avocado, tomatoes, lettuce, onion, salsa! 
  8. Enjoy!
