Instagram has always been one of my favorite social media platforms. It's such a great way to connect with other bloggers, friends and family. I can honestly say I've made friends through Instagram. We connect with each other, comment, chat and feel like I know them.

The creepy side of me loves Instagram because I love the inside look it gives you into other lives, recipes, adventures and all the exciting and not so exciting parts. Its encouraging, challenging, positive and I just love it.

There has been a lot of talk via the Internet about how Instagram is fake and how its unauthentic. I disagree. Sure, you can find the fake parts. You can find the people that follow you just to get you to follow them back and then bam - they instantly un-follow you -- don't even get me started on that part of Instagram. Sure, the negativity is out there, the "bad" part is out there.

But so are the really good people. So are the people who comment on your pictures because they want to and they want to know you. So are the people who share your likes, dislikes and beliefs. I for one can vouch that those people out there. People I've never met in person but who I consider my friends.

11 Reasons Lemon Water is awesome.

I've been joking that my Monday bachelor nights are filled with lemon water and blogging. But it's the truth. Lemon water is getting me through #soberjanuary.

While it was part of my 2016 resolutions to start the year with a refresh - cue the lemon water and 30 days of strict paleo, I pretty sure the lemon water will be one of those things that sticks around past January 31.

Did you know that besides just being super refreshing and a cure for a lack of wine, lemon water actually has some amazing benefits for you?

It's become my new morning ritual and I can honestly say I feel better. I feel less groggy. I was used to having stomach aches and now they're gone! Besides the fact that lemons have a ton of potassium, there are all kinds of additional benefits to warm lemon water.

  1. Reduces inflammation: I love this. Even though I'm 5 months out of knee surgery, I still have some inflammation and this helps! Lets have healthy joints too people.
  2. Aids digestion: Lets get all those toxins flowing through and out of our body. 
  3. Helps you lose weight: This is just icing on the cake to all the other benefits.
  4. Relieves indigestion or can ease an upset stomach: Bubbly tums got you? Have a glass of warm lemon water and I promise you'll be feeling better in no time.
  5. Relieve heartburn: I think we can all agree heartburn is the worst. 
  6. Helps get rid of your coffee addiction: Don't get me wrong, I LOVE my coffee. But I drink my warm lemon water before my coffee and I don't crave it nearly as much. 
  7. Increases your vitamin C intake: People, it's flu and cold season - get that Vitamin C. Lemon water can battle the common cold. Knock on wood, I haven't been sick one, not even a little since the start of 2016.
  8. Clear skin: Clean skin, less wrinkles, reduces scaring. As we get older, I'm all about for something that helps build collagen in my skin and gets rid of all those laugh lines. 
  9. Reduce high blood pressure
  10. Freshens your breath: Yes, please! And reduces the chances of tooth pain and gingivitis. 
  11. Lots of nutrients: Citric acid, potassium, calcium, phosphorus and magnesium. 
Side-note: Lemons are highly acidic and can ruin the enamel on your teeth. Make sure you dilute it a little bit - aka adding water.

When I was 20, I had the coolest experience to study abroad in Florence, Italy. It was the coolest 2+ months of my life. I learned how to travel by plane, train and cab. I figured out how to get around in a town that doesn't speak english and I gained about 15 pounds. It was awesome.

Something that really bonds Adam and I is that he got to have a similar experience, but in the Dominican Republic. Adam got to spend an entire year in the Dominican. He helped build homes, teach children and even visit Haiti. His experience was incredible.

It's now one of the top places on my list to visit.

When this company reached out to me, I knew I wanted to support a business started and thriving in the Dominican. This stone is only found in a mine based in the Dominican Republic. Wait until see these gorgeous stones. Head to their website at and show them some love!

Tell us about your business!
Well, we actually just got into this business about a year ago. We’ve always wanted to do something that allows you to combine designing as well as marketing. Being on just one of those ends is great but not ideal. When you work on both ends you really get insights on what a customer is looking for and it really allows you to get into a customer’s mind. So how that works is we brainstorm all kinds of ideas on specific jewelry types, forms, designs etc. and then get everything made and then give samples to certain customer groups for feedback. Once we have feedback and have a good estimate on what will likely work and what won’t we start a large scale production. And once the production is finished we get into stage 2 which is marketing. We push all of our larimar jewelry on our Social Media as well as with paid advertising. Then we lean back and hope to make a lot of people happy.

Tell us how/why you got involved in this kind of business.
We first stumbled across Larimar like I mentioned above about 1 year ago. It was more accidental than anything. We were looking for gifts for our parents when we saw a little stand on the street selling this gorgeous turquoise stone. We instantly stopped and had to investigate further. The seller told us that the stone was called Larimar and that it could only be found in a single mine on the planet which was based in the Dominican Republic making it a particularly unique Dominican gemstone. We purchased a few samples and when we got home and showed our friends a lot of them wanted to know where we got them. That’s when the light was sparked and we decided to start selling Larimar.

What are your goals for your business?
Well, for now we really just want to establish ourselves as the official place to buy Larimar. There’s a few ways we plan to do that. One would be via Social Media, that means really creating a large following and the right way to do that is by offering quality content on everything surrounding Larimar. Another thing is actually really offering high quality Larimar, so we’re working on continuously expanding our selection of Larimar Jewelry and also looking for new craftsmen as well as jewelers that can bring new unique styles to our selection. And then obviously the ultimate goal would be to make a good living off Larimar while creating an amazing product that people are excited to have and wear. Honestly speaking though I think both go hand in hand so achieving one of those goals implies the other. 

What’s the inspiration behind the name of your business
Unfortunately there’s a lot of junk being sold as Larimar which is either not real Larimar or just a cheap imitation of Larimar. So it’s really essential to create a platform where people know they’re getting the legitimate thing. That’s why we decided to use the domain which obviously creates instant trust as an official platform.

Trust the timing of your life.

Happy Friday everyone! This week was long. I'm excited for the weekend for some much needed rest and relaxation.

Lately I've noticed a trend, maybe it's just a blogging trend, but it's definitely 2016's trend. It seems like everyone is picking a word to describe 2016. Acceptance. Forgiveness. Say no. Say yes. In the spirit of resolutions or maybe in the spirit of getting rid of resolutions - picking a word to focus on seems to be the popular thing to do this year.

I for one, didn't pick a word for 2016. I totally agree with the idea of it, but when I sat down to think about what my word would be I drew a complete blank. How could I possibly pick one word to describe or focus on for an entire year.

That was until this morning. I woke up at 5am and all I could hear was patience - trust the timing of your life. It was like God was speaking right to my heart.

This verse was ringing in my head --- 

Ecclesiastes 3:1 There is a time for everything and a season for every activity under the heavens. 

Read that again.

I have to be perfectly honest, I don't do waiting very well. I've said it once and I'll say it again, I am a planner. My life is planned out months in advance and I like it that way. I like to be in control.

But it seems lately there are so many things out of my control. From finding a house, closing on a house - to job situations, blog situations, friend situations. I feel like I'm not in control. Things are not happening when I want them too, how I want them too and I feel a little like I'm on a roller coaster. 

I was just telling Adam like night how I feel like everything is just kind of flying around me and I'm doing all I can to not fly away with it. I'm trying to control what I can, but I'm sucking at it. 

Last night when I went to bed I prayed for patience and peace. I didn't really know why or what I was searching for, but them boom - 5am, God knew. 

I'm learning to trust God and trust the timing of my life. There are things that certainty aren't in my timing or my plan. But I'm learning that those things are usually the things that end up being the very best.

So while me, the planning months ahead control freak, is kind of freaking out about things in life, I'm learning to trust. I'm learning that I cannot possibly be in control of everything and that usually things work out in the long run, even if I cannot see those things now.

Recipe: Salmon and Asparagus

I've seen these types of recipes circling Pinterest and all over blogs - the one pot meal. But aside from chili or a crock pot, I've never really tried it. Well, that day is here blogworld. I'm a fan. I'm on the bandwagon. I'm about one pot meals. But let's be real, I'm about any type of meal that is delicious and easy.

I saw this recipe on Pinterest and with some modifications, I made it my own. I am obsessed with salmon. All kinds, prepared all ways and am super excited to share this one with you.

Things I would change? I would add some spice to it. It had a nice flavor. But I love things spicy - so next time I might add some Cajun seasoning, cayenne pepper or even some red pepper flakes. I think just that little addition would turn this one-foil salmon into the best.

  • 2 salmon fillets 
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper
  • 1 teaspoon dry oregano
  • A bunch of asparagus
  • 2 slices of onions
  • 4 slices of lemon
How to Make:
  1. Preheat oven to 400F.
  2. Place the two pieces of salmon in a medium bowl. Pour 1 tablespoon olive oil, sprinkle salt, pepper and dry oregano over salmon.
  3. Cut two pieces of foil.
  4. First place asparagus (about 8 spears) on the sheet of foil.
  5. Layer fillets over asparagus, then top each with about 2 onion slices and 2 lemon slices.
  6. Wrap sides of foil inward over salmon then fold on top and bottom of foil to enclose.
  7. Place foil packets in a single layer on a baking sheet.
  8. Bake in preheated oven for about 20-25 minutes. 
  9. Unwrap and using a large spatula, transfer the foil packets to plates and serve warm.

The Bachelor: 29 of my greatest thoughts.

Besides Jubilee and the drama with the woman, this episode was kind of meh to me. Soccer games, jealous girls, cat fights and make out sessions. The usual. Tonight instead of a full recap - I'm sharing my greatest thoughts with you.

Adam is sitting next to me reading his book, but he's listening enough for commentary. Adams comments are in italics. I'm pretty sure his few comments are better than all of mine.

  1. I think Chris Harrison should be around more.
  2. Olivia looks completely different with and without makeup on. Like I get it, a little makeup goes a long way, but she looks like a different person.
  3. When I had false lashes did they look as unrealistic as Lauren Bs? 
  4. Who am I kidding, that girl is a babe. I still think she's gonna win the whole thing.
  5. Seriously, they fly over the mansion?
  6. I can't with the hot tub. Two one-on-ones with a hot tub. Can I be real, if I was the Bachelorette I would not have a hot tub.

Guest Post: An inside look at online dating

Did you know started in 1995. eHarmony started in 2000. Tinder in 2012. Betcha didn't think they were around that long? Getting people together since 2000. That should be there new catch phrase. 

I started dating in high school, my first date was when I was 16, so 2003. My class had 89 people in it so most of the guys I went to school with, I'd known since I was 5, but hey - you met a guy and you dated. College was the same story. New class, new group of guys. You go to dinner and boom, you're dating. I guess I'm one of the lucky ones who found her husband in law school where the same situation applied. He asked me to dinner and boom - dating. 5 years later- married.

Nowadays, dating takes a whole new form. 200+ questions asked by a computer to find your match. Swipe left, swipe right - is this just a casual dating app? Does my profile picture make me look available or desperate? All I know is props to you ladies and gents pursuing online dating. I know quite a lot of people who have had huge success online dating - married with kids. It's the new reality.

I have the best post for you today. A friend of mine, who shall remain anonymous, for full disclosure, is sharing her adventures with online dating. It's such an awesome, hilarious and raw look into life in 2016 and what dating has evolved in to. 

To the gal who wrote this, thank you. I love being able to share the mind of a smart and thoughtful woman. Keep doing what you're doing, I cannot wait until you find Mr. Right, because of all people, you deserve it.

Without further ado: Adventures in Online Dating.

Picture yourself sitting at a beautiful Thanksgiving dinner table. You’re surrounded by loved ones and delicious home cooked food is steaming in front of you. A roaring fire is warming the room just right. You slowly lift a huge spoonful of cheesy mashed potatoes to enter your gullet when you hear a deep sigh and a…”I guess I’ll be too old to help out with your grand-kids with the rate this is going”…glorious food moment is ruined. Um, thanks mom. 

So the time has officially come that you have to seriously think about finding a man. Your other half. The old ball and chain. I’ve successfully dodged the thralls of online dating for a while now. I’m forever thankful my brother decided to get married to his love. They popped out my nephew real quick which seemed to tame the grand-maternal instincts of my traditional Midwestern mother for at least a couple years. Thanks for looking out big bro! 

But *sigh* like most good things, that blissful time has come to an end. In alignment with a majority of single people in their late 20’s I am inundated with the daily reminder that everyone is doing better than me in the realm of tying the knot and spawning genetic clones of themselves.  Which if you think about it is both poetically beautiful and the truest form of narcissism, but I digress. The point is that it’s boyfriend huntin’ season! 

As a disclaimer I live in the city of Los Angeles which is the American capital of shallowness and broken dreams. I promise I’m an optimist! I signed up for 3 different websites:
Tinder: The first is Tinder which is exactly how it sounds; a matchbox of flames that burn out just as quickly as they start. This service is free to download to your Smartphone and utilizes GPS technology to geo-locate hot singles within a certain mile radius of your current location. (I can’t wait to see the news about the first Tinder serial killer who found a way to stalk his victims via this service). This app has a few flaws I’ve noticed right away, the main one being that very little personal information is provided to you, so you’re swiping yes or no on people almost solely based on their physical attractiveness. Thus you’re automatically setting yourself up for failure if you’re like me looking for a deeper connection with someone whose morals and values align with your own.

In addition, the information men do decide to put on their bio seems to be limited to their height for some reason or some cheesy pick up line like “what’s the difference between me and my couch?” I’ll let you figure that one out on your own. I’ve also noticed that so many guys treat this app as some sort of game to inflate their ego and they think it’s absolutely hilarious to post profile photos of wild and crazy situations! I’ve seen pictures that include a man being arrested in a Santa suit, a dude passed out on the bathroom floor with a forty taped to each of his hands, too many rubber horse heads to count, pictures of just their dog, couples soliciting a 3rd to invite to their “late night party” and countless group photos of dude bros that all look eerily similar. I’m sorry, are you trying to blend into a crowd of your hotter friends and then when we meet up in person be all like “Surprise! Out of the 20 guys in my pictures, I’m the ugliest one!”. In this situation we all lose,  John. 

OkCupid: The second website seemed a little more promising to me. OKcupid like Tinder is a free service for females. They prompt you to answer questions about yourself, your lifestyle and worldviews. The bio section is more extensive with room to express what you’re currently doing with your life and what you’re looking for in a man. Things were starting to look good, until I saw the selection. Holy Batphone these boys are fugly! I mean, is this thing broken, hello?! DO NOT hang up on me customer service lady I need answers! I do realize that at this point I may seem like I’ve drank the Los Angeles shallow Kool Aid, but honestly answer me this question: When you roll over in the morning do you want to gaze upon the glorious face of *insert any Hollywood actor with the first name of Chris* or Steve Buschemi?  The point is that you need to have at least some physical attraction to your man or it will never work. Every woman deserves someone she is proud to be with and every man deserves a woman who thinks he’s fantastic (and slightly resembles Chris Pratt…)
One thing that OKcupid brought me that Tinder never delivered on was contact with an actual red blooded male. I got messages. I got more messages…and then more and more and more! My inbox was overflowing with real guys trying to talk to me! I spent time going through each and every one. 

After wading through 30+ messages I finally found a handsome, young guy. He’s an employed writer! He’s funny! He likes Game of Thrones! I started to think things were really happening. We talked a little bit on the site, which led to some direct texting, which led to an agreement to meet up for coffee. 
Let me take a moment here to let eager male online daters in on a secret: coffee is lazy, coffee is cheap, coffee says “you’re not worth talking to longer than a Nora Jones song and the time it takes to awkwardly order a skinny vanilla latte with a near stranger standing behind you not knowing what to do with is hands”.  
I only agreed to coffee because I didn’t want to appear high maintenance. But for the record, I prefer drinks or if you don’t drink alcohol maybe some appetizers because if you recall (to my mother’s horror) I love shoving food into my face. The date went just as well as any first date that takes place in a loud, brightly lit coffee shop is expected to. We got along well and agreed to continue to talk in the future. That night I heard a familiar ding on my phone and was excited to answer the text message that was sure to be my guy saying “I had a great time, let’s do dinner next”. But to my horror I was sidelined with a big, pink…oh. Sweet. BABY JESUS. Yes, I was dick pic’ed. He seemed so nice too. Frustrated and confused I deleted the app and refused to talk to him again. It seems like being a modern woman these days involves being a freak (while also remaining a virgin) and the silent acceptance of virtual eye assault. Strike two.

eHarmony: Which brings me to my last dating website I tried; eHarmony. This particular website is a Christian based site created by of all people a theological educated psychologist and an alumni of my University. The whole point of this website is to get a sense a who you are and then match you with individuals who’s values align with your own. I filled out an extensive survey that asked me questions from “does it bother you if your partner smokes occasionally?” to “what denominations of Christianity are you willing to date?”. The questionnaire took me roughly an hour to complete and I felt like the algorithm captured the essence of what I was looking for. I immediately regretted how much emphasis I put on religion. A majority of the guys I matched with mentioned Christ no less than 32 times in their profile. Listen, Jesus is my homeboy, but I’m not trying to hang out with him as he tries to follow me into the bathroom stall or braid my hair when kissing my boo.

I ended up getting a message from an older gentleman in his 50’s who offered to “take care of me” which I’m pretty sure is older man speak for “make me his sugar baby”. I told him as politely as possible that he looked like my father and yes we have a great relationship so I will not be needing his services. He responded with the longest multi paragraph message I had seen ever seen flaunting his cancer research, non-profit education system for third world children, and various accolades in his profession. I wasn’t sure at that point if he was trying to date me or obtain a financial grant to continue his oncology research. This experience opened my eyes to a couple things. First, grown men who look like my father actually think a 20 something girl is a viable dating partner and Second, the thirst is real! I had to block him just to stop the constant barrage of messages. Strike three.
When I first set out to share my experiences with you I was starting to believe that maybe online dating wasn’t for me. But then something crazy happened.  A handsome man messaged me on eHarmony. His profile was so refreshingly real and pleasant. All our worldviews  and interests were in agreement  and after messaging for 2 weeks I felt comfortable enough to meet up with him. We’ve gone on 3 dates thus far and they all flowed comfortably intermingled with easy laughs and mutual teasing.  The first date - Natural history museum and then dinner and drinks (he paid for dinner and drinks). The second - dinner and a movie (he paid). The third - Game of Thrones mini marathon. Basically I have no idea where this is going or if he’ll become my serious boyfriend, but that’s the whole point of dating. You’re there to open yourself up, meet new people, and find out what’s right for you specifically. If you just relax and be completely honest with yourself, you might just end up with a permanent fixture at your family’s next Thanksgiving meal (and a mother that might just stop nagging you to find somebody. Can. I. Live?)

Offering to take her out to dinner and paying for the whole thing is the quickest and easiest way to endear a lady you are trying to woo.  I don’t know a single girl who doesn’t appreciate this simple gesture. The key is to not hesitate when the bill comes, it makes it awkward and we ALWAYS notice. Now I know a lot of guys will start huffing and puffing at this point about wasting his time and money on girls just looking for a free meal. I would like to point out that dating is an investment and just like the real life stock market, sometimes you get a nice return and, sometimes you lose out. The point is that you are showing that you are willing to invest in her and that is such a grown ass man thing to do. If you’re absolutely not feeling her by mid-meal, simply offer to split the bill and she will gladly oblige then never call you again! Such an easy way to let her go gently!
  2. Never put specific location identifying information online and always insist on meeting up with your date the first few times. The last thing you want is for him to be a creep and now he knows where you live. (Girls, Kristen coming in - please listen to this! I watch wayyy to much Law & Order - do not give personal identifying info, okay preach over)
  3. Don’t feel obligated to respond to every single message, even with a polite let down. Not only is it exhausting but it will frustrate you as you quickly discover how many frogs you have to wade through before you find your potential prince. If you are not attracted to him at all, or if he’s into open relationships and that’s a deal breaker for you, don’t waste your time. It’s about quality not quantity with choosing who you spend your time with
  4. Have fun! I know, online dating can suck, but maintaining a positive outlook is integral to the process. Try to think of the experience as getting to know a potential friend and if it doesn’t work out with that person, it wasn’t meant to be.

Happy Friday everyone! There's a lot going on over here in our little city of Denver, Colorado. We're only 15 days in to the new year, but I can already tell this is going to be one fabulous year. Cue the Usher song, these are my (friday) confessions.

  • I am not handling the news that One Direction is breaking up very well. Between N'Sync taking a temporary hiatus in 2002 and never coming back -- to Blake and Miranda divorcing in 2015, I am not ready for another break up. 
  • Adam and I are one month from closing on a house! Keep your fingers crossed that everything goes smoothly! P.S. Just you wait for my how-to-buy-a-house post - it's a doozy. 
  • As of today I have had no alcohol nor have I cheated on the paleo diet in 15 days and I am feeling great. Honestly, I've never slept better. Now, let's get down and dirty; Bachelor is not the same without wine. 
  • NBC is doing a 2-hour special honoring the director of Friends and the WHOLE cast is going to be there. Talk about reunion. I'm freaking out. 
  • Adele's album has been out over almost 2 months and it's still the only CD I listen to. I literally can't stop. 
  • I'm ready for summer. Am I allowed to say that? I was so ready for winter, but not being able to ski in Colorado sucks. Time for tans, outdoor BBQs and fruity drinks.
  • I just changed my Siri voice to a British woman and it's the best thing I've done in a long time.
  • I've never seen Star Wars before, so Adam and I started Episode 4 and I LOVED it. My goal is to get them all watched in time to still see the new one in theaters. 
  • This week has been so busy. Last night, I was in bed at 7pm. You can start calling me Grandma Kristen. I totally own my early bedtime. 
  • This is a pathetic confession, but I'm really trying to grow my Instagram and it is the biggest game of hide and seek ever. Hey followers, come out, come out wherever you are. 
  • I'm planning a huge giveaway for once I get to 2000 followers. So, hey, let's get there, the giveaway is great, I promise! 
  • I'm obsessed with this mug my friend Ally made me. She owns an Etsy store and creates amazing stuff. Go check her out!

Recipe: Paleo Hatch Green Chili Casserole

Casseroles are the best. What other meal combines everything in one dish and still manages to taste amazing? Here's the truth up front about this one -- it takes forever. I got home from work thinking I could whip up this casserole and then watch some RHOBH before Adam got home. Turns out no. 

On a scale of 1-I'd made this again, I'd say 7.

Would I consider this a paleo-fail? Not quite. Paleo-success? Meh.

Hey, this blog is the good, bad, ugly, delicious and all the in between. This casserole isn't the best thing Ive made, but it's not the worst. It's the in-between.

Ya know what this casserole would be good for? People who love chicharrones. You'll see why soon enough.

  • 1 tablespoon coconut oil
  • 1 1/2 pounds chicken breasts
  • 4 cups water
  • 1 pound breakfast sausage
  • 2 pounds cooked hatch Chile peppers
  • 1 1/2 cups salsa Verde
  • 1 can organic full-fat coconut milk
  • 2 limes, juiced
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons arrowroot powder
  • 2 cups friend pork skins -- chicharrones
  • 1 cup fresh cilantro 
How to Make: 
  1. Melt the coconut oil. Season the chicken with salt and pepper. Cook for 3 minutes on each side. Cover with water and simmer for 15-20 minutes. When cooked, drain chicken and shred. 
  2. Brown the sausage. Set aside. 
  3. Roast, clean and chop the Hatch chilies into 1 inch pieces. Add the shredded chicken and sausage to the bowl and stir together. Pour the mixture into a casserole dish. 
  1. Combine the salsa, coconut milk, salt, lime juice, cumin, chili powder and arrowroot in a bowl. Whisk until smooth. Pour over filling in casserole dish. 
  2. Cover the dish with foil and bake at 350 for 30 minutes. 
  1. Crush the pork rinds into a rough powder. Chop cilantro. Stir together.
  2. When casserole is finished, sprinkle the topping. 
  3. Enjoy!

Bachelor: Lace is still here.

As much as I love the first episode of the Bachelor, I love when they start getting into dates, actually getting to know the girls and all the juicy stuff.

Last week we learned that Lace cannot hold her liquor and is extremely jealous, twins apparently talk in unison and if you bring a pony to the bachelor you will get kicked off.

This week we learned that bobbing for apples is a turn on for Ben, dentists are fast runners, everyone thinks Ben forgets about them and I have a lot of questions. This week I'm asking all the questions. This week I'm rambling about the Bachelor. 

PS, due to the unfortunate scheduling of the National Championship Game, Adam will not be commentating this episode of the bachelor -- but have no fear, he'll be back next week.

I'm not one to pick out certain girls, but can we talk about Lace for a minute. First, she wants him to get to know her. So she apologizes and then doesn't let Ben talk or explain. Second, she's pissed that other girls are there, um.. hello, it's the Bachelor.  Have you never watched this show before? Three, she calls out other girls. She's totally the girl that says "I'm not letting the other girls ruin my relationship with Ben." Has she learned nothing from any of the other seasons? Get along with the girls or you will go home. Anyway, enough wasted breath.

I cannot help but laugh when the Bachelor, ABC specifically, tries to plug their own show or movie. Cue, Ice Cube and Kevin Hart giving Ben advice while the casually mention "ride along" in their conversation. Come ABC, do you not make enough money off the bach?

How awkward is this conversation between Caila and Ben with KH and Ice Cube in the back seat - and then in the hot tub? Okay. Regardless, huge chance she's in the top 3. They're adorable together. And Amos Lee, so rad. Why won't famous singers sing for Adam and I?

So I think this science stuff is kind of awesome. But the smell test is no good and Olivia bugs the crap out of me. How do twins date the same guy? Like what happens if one wins? And the other made out with him? I mean, just imagine the family gatherings. Amanda, she rocks.

Is Ben drinking water at the Rose Ceremony? Why are these girls so crazy? Ladies, let me explain something. This is the Bachelor. Girls will "steal" Ben from you. Lace, why are you harassing Olivia? Lace, what are you saying to Ben? This is nuts. Ben making hair barrettes for Amanda's kids, are you kidding me. I can't.

I've told you once and I've told you twice. My favorite part about blogging is the community I'm growing. There are so many incredible woman (& men!) I'm meeting and getting to know through this space of mine.

The other part I love about blogging is helping and encouraging other bloggers. Blogging can be tough. It's hard work, requires a lot of dedication and a lot of attention. If you haven't read yet, I shared my Day in the Life of a Blogger - it's no joke! And I don't even have kids.

Hey moms out there, you women are champs! That brings me to my amazing, superhero of a guest today!

Jessica is a full-time mom, wife and blogger. She manages a full time job, two adorable boys, a husband, a household and an adorable blog. If that doesn't make her a superhero, I'm not sure what would. Oh, and the bonus? She blogs about the Bachelor just like I do - just another reason I like her so much.

I'm super excited for all of you to get to know her today! Without further ado - Jessica!

Why did you start your blog? 
I actually started blogging in 2010 right after I got married. I needed something to channel my energy into once I was done wedding planning! That blog was semi-private, only a handful of family and friends read it. Then one day in November 2015, it hit me… I want to REALLY blow, get out there and meet other incredible bloggers & make a space that I can share. I was finally out of the baby phase of raising my two boys and was starting to feel like myself again (sleepless zombies days mostly in my past…) and I wanted something for me, something I was passionate about.  So I started Little Bits of Joy!

Tell us about you, the girl behind the blog.
I was born in a small town in Oregon and moved to the Portland area in my mid-20’s, met my husband (after kissing A LOT of frogs!), got married in September 2010 and had two crazy little boys. I’m a total introvert - I need quiet time to recharge, which has made the journey into motherhood really hard for me, someone always needs me and my house is always loud and chaotic!! I struggle to find balance in my life since I work full-time, and want to be the best Mom and wife I can be as well. I’m always looking to improve myself and I’m FAR from perfect.  I’m obsessed with pop culture (I do a Bachelor recap every week!), love to read, color, dance, get outdoors, drink wine, Mike-n-Ikes are my love language, I hate being tall (heels make me look like an NBA player!), I wish I could save all the whales at Sea World and I love history and historical things (I live at the literal end of the Oregon Trail!).

How did you pick your blog name?
It came to me as I was driving home one night. I was thinking about starting a new blog, and wanted to talk about all the little happy things that happen in life, or the little things that bring me joy, even if that is something silly or funny or being able to share a struggle (misery loves company, right?). There is joy in connecting to other women and finding friendship and encouragement, and I wanted that to be my space. Like I said, motherhood has been a struggle for me in a lot of ways, and I needed to focus on the little joys of everyday.

What is your favorite and least favorite part about blogging?
Favorite- Having people tell me “oh my gosh I love reading your blog!” or being told that I’m funny… I think I’m funny, but it’s nice to have others think that too. Or have someone thank me for sharing a struggle because they are experiencing it too and don’t feel as alone anymore.

Least Favorite- Getting my blog looking nice; HTML code, and widgets and all that jazz - UGH.

How do you balance a full time job, blogging, two kids and a husband! What are your tips? You’re a superhero!
You are so sweet! If only I really was!!! My 3-year-old is a superhero, did you know? His magical hooded bath towel transforms him! Really, well - It's hard. I’m the first to admit that balancing everything is tough and sometimes I just break down and cry. I have to stay really organized- that is the key!!! I have a sure-fire routine in the mornings to get us out the door quickly, I rely on my crockpot a lot for dinners, and I let my husband take over in the evenings so I get some downtime (reading, coloring, or watching The Bachelor!) and really long hot relaxing showers. As a mom you have to make sure you get some self-care in your day… it’s important to take care of yourself too!

Favorite posts?
-The Best Gift I’ve Ever Received. It was a little soul-bearing and I was scared to write it, but looking at my life and realizing everything happens for a reason is a wonderful thing to reflect on.

-The Time I Was So Over 2015. I’m like everyone else… I get caught up in how pretty social media paints everyone’s lives to be and I forget that we all struggle, we all feel unattractive sometimes, and we all are just OVER it sometimes. I love sharing those moments and knowing I’m not alone!

-I’m all things Bachelor right now since the new season started! It was really fun writing The 10 Reasons We All Love The Bachelor because,’s true!

Where do you find your blogging inspiration?
I try and look for inspiration just in my day to day life, hoping there is something interesting happening! Some days it’s just work, making dinner and playing Ninja Turtles with my oldest son. I am inspired by those bloggers that are witty, brutally honest yet endearing. That’s how I feel like I am to my friends and those who know me, so I want that to be conveyed in my blogging too. There are SO many amazing bloggers out there. I read about 50 blogs a day and am always in awe over their skills! #goals

I’m obsessed with the bachelor too. Thoughts for this season?
Oh man, we are in for a ride, girl! Ben is super tall, dark, and handsome and… a bit dull in TV terms, which means the girls they cast will be extra crazy to make the show entertaining! So for it’s off to a good start - I mean the unicorn head limo entrance? I think we are in for a season of major tears and cat-fighting over the hunky prize! I’m team Lauren B right now! Not to mention her dress on night one was gorgeous.

What is one thing you want my readers to know about you?
Probably that I try to always be real and honest. I suffer from post-partum anxiety and it’s nothing to be ashamed about! I’ve blogged a bit already about my struggles with it and the insomnia it’s caused. We women try and do it all and be everything to everyone and we get embarrassed to share and talk about the hard stuff, even though we all have hard stuff in our lives. If we lift the veil of “perfection” then I think we can all learn to support each other and encourage each other… I will always be the first one to laugh at myself, admit I’m having a hard time, etc.. so your readers I hope will connect with my honesty and know that I’ll always just tell it like it is.

Did I tell you or did I tell you. It is so refreshing to hear from a blogger who loves what she does, loves her family and tells it like it is. Recipe: Sweet and Sticky Chicken Bites + Cauliflower Rice

Babe, it smells like poop in here.
Babe, seriously.
Kristen, why does it smell so bad in here. [insert fake gagging noises]
This smell is never going to leave our house.
Can we open a window [mind you, its 12 degrees outside]
But really, what are you making.
How are you going to eat that? [more gagging noises]
This is what happens in our house when I make anything with cauliflower in it. Steamed cauliflower, cauliflower rice, cauliflower with cheese. Doesn't matter, Adam think its smells like death.

Now, if that didn't make you super pumped for this recipe, I don't know what will! The cauliflower rice is only a very small part of this recipe, so if you or your significant other can't stand the smell, this post is still for you.

If it were up to me and my metabolism allowed, I would eat chinese food all day, every day. Doesn't matter what kind, I would eat it.

When I found this recipe, I instantly thought it closely resembled Adam's favorite sticky chicken bites. The thing I like about this recipe is that it is less salty and more flavorful. I'm not knocking the other one, I love that one, but this one is just so much better!

  • 1 head of cauliflower, chopped
  • 1/3 cup chicken or beef broth  (I added a titch more as it was cooking because it was dry)
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil
  • 2 pounds chicken breasts, cut into cubes
  • 2 tablespoons coconut oil
  • 2 garlic cloves, minced
  • 1/2 small yellow onion, minced
  • 1 can full fat coconut milk
  • 1/4 cup honey
  • 1/2 cup coconut aminos
  • 3 tablespoons Sriracha (depending on how spicy you want it)
  • 1/2 teaspoon red pepper flakes
  • salt, to taste
  • 1/4 cup tapioca flour

How to Make
  1. Run florets of cauliflower through a food processor using the shredding attachment, to rice the cauliflower. 
  2. Place a medium saucepan over medium heat, add cauliflower and broth or water and garlic powder and salt to the pan and cover to let steam for about 10 minutes. Mix a couple times to keep from sticking to the bottom.
  3. Now place a large saucepan or dutch oven over medium heat. Add coconut oil. Once oil is very hot, add chicken to the pan without crowding the pan to help with searing. Sprinkle with salt. Once chicken begins to turn white, flip on cook on other side. After chicken has cooked through, remove with a slotted spoon and set aside.
  4. When chicken is done cooking, add 2 more tablespoons to the pan (if needed) then add garlic and onion. Once onion becomes translucent, add coconut milk, honey, coconut amines, sriracha, red pepper flakes, and salt. Whisk together and let come to a low boil then reduce to low heat.
  5. Lastly, while continuously whisking, add in tapioca flour ⅛ cup at a time. Be sure to continuously whisk to keep from tapioca flour from clumping.
  6. Once mixture thickens, add chicken to the pan with the sauce and coat, let cook for about a minute to reheat the chicken.
  7. Pour sauce and chicken on top rice and garnish with green onions.
Look at that fluffy rice! 
The sauce should thick and sticky, keep it on the heat and stirring if not. 
yep. thats the stuff.

The Bachelor is Back!

Guys, the most awaited show of 2016 is here. Okay, maybe not the most awaited but I am totally pumped. The Bachelor is one of my guilty pleasures and documenting it week to week is one of my favorite tasks.

The first day on the Bachelor is usually one of the best. Someone gets too drunk, someone has an arbitrary job title and there is usually a kiss (gasp!)! Blogging along with the Bachelor makes it so fun.

Just a heads up - I don't read spoilers and I really don't like spoilers. So let's play nice and get through the season without Reality Steve (or comments) ruining it for us. The only thing I do, is post a picture at the end of every Bachelor post with the girls who got booted. I put a red X over their face. So if you haven't watched yet, or don't want to know, stop reading and don't scroll. If not, keep reading and let's chat Bachelor.

Wanna know what else is fun about watching the Bachelor? Adam is sitting next to me, reading a book and listening in. His occasional thoughts are my favorite - don't tell him, but his comments will be in parenthesis and they're hilarious. To start us off, here are a few from him.
  • Ben's mom telling him she know's he's going to find the one. [not true, there are a lot of crazies out there Benjamin]
  • Ben introducing Chris, Sean and Jason as the bachelors he looks up to because they found their soulmate. [wait, Chris didn't]
This episode one was no different than most, but the girls definitely were:  
  • Haley and Emily the twins [that's gonna be super annoying] - they have got to go.
  • The girl who broke up with her boyfriend because she saw Ben on Kaitlyn's season [um...].
  • What the heck is a chicken enthusiast and why does she have framed pictures of them next to ben?
  • Lace, no - stealing the first kiss is no good. And don't be bitchy on the first night. And didn't everyone tell you not to get super drunk on the first night? Don't even get me started.
  • Hey Leah, keep your skirt down. [wow, that was classy]
  • Oh Megan. A pony? 
  • Jackie - you gave him a save the date to your wedding? Next. 
[kristen, please save me. wasn't this just on like a week ago?]

I really like Ben. I'm glad Kaitlyn didn't pick him because now we get to watch an entire season of him! And hey, he's here to find his wife. [how many times does he tell people he's looking for a wife?]

This week  - my favorite girls and my top pick for who I think wins Ben's heart in the end.
  1. Amanda, the esthetician from Rancho Santa Margarita, CA with the two daughters. [she's gonna be too shy for him, otherwise she'd be the leader in the clubhouse]
  2. Olivia, the gorgeous anchor woman from Texas [she's gonna be in the final five - maybe even the final three]
  3. Caila, she's a little too eager for me, but I feel like he's going to fall for her. And, they both sell software.
  4. Becca, I just love her. 
  5. Winner? I think it's going to be Lauren B, the flight attendant. [she's totally going to win.]

It's January & You want to Try Paleo?

It's hard to believe it's already January 4, 2016. That seems crazy to me. It seems like just yesterday I was decorating the Christmas tree and now I'm taking it down, packing up the decorations and prepping for 2016.

Adam and I made the decision WAY back in 2015 to start off 2016 on the right foot. Unless you are brand new around here, you know that Adam and I live/eat/love paleo. As most of you know our adherence to paleo is strict 80% of the time. We love our weekends and we love beer and wine.

Well to start 2016 off right, we decided that in January we would not cheat on the paleo diet. Adam is going to enjoy other food options on Saturday nights, but I'm going for it. Yep, you heard that correctly. That means no Wednesday night happy hour, no Sunday brunch (unless it's paleo), no Friday night pasta binges. Sober January (& eating clean) January has begun! #soberjanuary

Before you tell me that "I only live once" and "I need to live a little," I want to explain why. We're in the process of buying a house (keep your fingers crossed) and we (over) indulged during the holidays. It's time to tighten the buckle on our jeans and on our wallets. We figure by cooking at home all the time and only drinking Saturday night's we'll save money and pounds.

I thought that maybe...maybe some of you are in the same boat. Hey, it's January 4, we've made our resolutions and hopefully as of today, we're still sticking to them! I thought I would share my paleo shopping list and some links to some very easy and delicious recipes to get you started! Paleo is tricky to start, trust me, I was not all rainbows and sunshine when I started. But choosing paleo is as easy as a piece of (gluten-free) cake once you get the hang of it!

Tips on how to start eating and living paleo are what really helped me. My top 3 tips are: 
  • Tip #1: We cleaned out our pantry and got rid of all processed stuff. We wanted a blank pantry to fill up with healthy food and we knew we’d be tempted if we left a freezer full of ice cream. 
  • Tip #2: We made a long grocery list and went shopping. 
  • Tip #3: Allow yourself to falter. If you go 100% all the time you will likely get burned out and hate it.

Like I said in Tip #2  - make a grocery list. It's imperative. I promise it will help you so much. Our first trip to the grocery store was a total disaster. We started at Whole Foods, wandered around for over an hour, bought 6 things for $50 and then made our way to King Sooper. We were surprised that most of the stuff we needed was at our local grocery store and for half the price. Score.

2016 New Years Resolutions & Goals.

Its 2016 - hooray! Happy New Years everyone! I hope you had a great New Years Eve, toasted to the old year and the new, got a big smooch and drank some delicious champs!

Lat year was such a huge year. It's hard to believe 2016 will top it, but I am more than ready and more than excited to see how it does. In 2016, three of my best friends, that are pregnant, will have their babies, two of my best friends are getting married, Adam and I are hopefully buying a new house and we have some amazing trips scattered throughout the year.

I can already tell 2016 is going to be awesome.

To prepare for all that, I have 8 'resolutions' for the big 2-0-1-6. I put resolutions in quotes because they're not quite resolutions as they are goals.

Merriam Webster defines a resolution as (1) the act of finding an answer or solution to a conflict, problem ect (2) an answer or solution. That definition doesn't really fit my plans for 2016. Instead - I'm looking towards my 2016 goals.  Goals: Something that you are trying to do or achieve. 

  1. Grow my blog. In 2015, I worked really hard at being consistent, posting good and interesting content, engaging with readers and other bloggers and even launching my sponsorship program. In 2016, I want this space of mine to only get better and better. I want to grow my social media reach, meet more amazing bloggers and readers and continue this little space on the web.
  2. Buy a house. Adam and I started working on this goal late in 2015 and we realized that people don't like to sell their house when its Christmas. Who woulda thought :) So, in 2016 I want to get up and running and find a new home. 
  3. Be better about my diet and working out. I preach a healthy balance. Work hard but reward yourself. I still believe in that motto, but I really want to focus on rehabbing my knee even more so, going to Pure Barre at least 4 times and week and eating healthier. 
  4. Create new recipes: The holidays make it so hard to create interesting recipes because life is so busy that I'm making what I know because it's easy. I really want to bring all my readers (& my husband) new, intriguing and delicious recipes! 
  5. Be a better wife, friend, daughter, sister, aunt (& any other title I have): I try my best to be a loving, encouraging wife. I try my best to call my friends regularly to catch up. I call my parents every day. I Facetime my nieces and nephews. But it kind of always seems like I'm being pulled so thin that I'm not doing the best job I can. This year I want to connect better, be more involved and present. 
  6. #5 brings me to this: Be present. Electronics definitely controls my life. Computers, cell phone, TV, radio, blogs, Instagram, Twitter. Yes, it's a part of my business, but there's a time and place for it. I want to get better at turning it off, shutting it down and being present. 
  7. Go to church every single Sunday. We are sporadic in our church going attempts. This needs to be our highest priority. 
  8. Travel. Last year was all wedding brain and all wedding travel all year. This year I want to make it a point to go on a vacation that's just for Adam and I (even if other people are there). Go on a couples trip, go to Tahoe, visit friends in their homes, see new places. We're young, but we're not getting any younger. It's time to embrace the opportunity before dogs turn into kids. 
There ya have it. 2016's goals. My other goal, secret #9 is to do monthly goals. I love other bloggers who do that because it's a great way to keep yourself accountable.
