Recipe [Recreated]: Salmon with Avocado Salsa

September 15, 2016

I make a lot of chicken and chicken is so boring after a while. It was time to switch it up.  My meal planning is usually done while I'm still laying in bed on Sunday morning. I was scanning through Pinterest when I came across this amazing salmon recipe!

When I told Adam I was making salmon, his first question was whether I was going to try and recreate my horseradish salmon. If you are new around here, you know that was the worst idea I've ever had. Feel free to try to recreate, but I would suggest starting with the recipe below, first.

I knew I really had to up my game or else I'm pretty sure Adam would never even look at salmon again. That is when I stumbled upon Denise's blog Sweet Peas and Saffron. She makes incredible recipes, incredible! This one is no different. Her chili-rubbed salmon is here!

I  love pretty much anything and everything that has avocado in it. You name it, I love it. Expect for avocado ice-cream. I haven't been able to jump on that train yet. One of these days, I am totally going to try, but for now, I'll just stick to avocado salsa.

This recipes is so good because its a great mix of spicy on the salmon with some fresh citrus flavors in the salsa! It's the perfect summer send off meal, even though I will be making this fresh salmon way into the winter months.

My biggest tip for salmon. Buy good salmon. If you're going to spend the time, get some good stuff. And by good, I don't mean frozen than thawed salmon you sometimes find at the grocery store. If you're in Colorado, I recommend Tony's Market! They have the best seafood and meats in town. But, trust me, the extra cost is totally worth it in the flavor.

Salmon Ingredients:
  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 3 tablespoons coconut sugar
  • 1 1/2 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Avocado Salsa Ingredients:
  • 2 avocados, diced
  • handful of chopped cilantro, about a 1/2 cup
  • 1 cup cherry tomatoes, cut in half
  • juice of one lime
  • 1 teaspoon olive oil

Ingredients:
  1. Pre-heat oven to 425. Cover baking pan in tin foil.
  2. Rinse salmon and pat dry. Make sure you get all the bones out!
  3. Brush salmon fillets with olive oil, salt and pepper (light!)
  4. In a small bowl, combine brown sugar, chili powder, ground cumin and pepper. Spread generously over the salmon fillets.
  5. Bake salmon 15-18 minutes, until cooked through.
  6. For the salsa - combine all ingredients and serve immediately.
 So many amazing spices!
Guys, look at those colors! Holy yum!

Needless to say, I redeemed myself in Adam's eye with this salmon recipe. He even told me it was restaurant quality! Guys, that is huge!

  4. Usually when I do eat salmon I like making a lemon and agave marinade or a cajun spice mix. I just love trying different flavors. I'll definitely be trying this recipe out. Btw love the addition of the salsa.
