Cookbooks Galore!

One of my favorite parts about cooking are the cookbooks. Sure, Pinterest is great but does it overwhelm any one else or is that just me? 15,000 recipes, half of which the links don't work and such beautiful pictures that I could never recreate. I lean towards cookbooks because of their ease. My favorite part about getting a new cookbook is sitting down and paging through the colorful photos and dreaming about making all these delicious dinners! I'm pretty sure I've found some of the best cookbooks, so I wanted to share them with you! Not all of them are paleo, but all of them are great, I can assure you. Lo Mein Zoodles and Chicken

I know what you're thinking, chinese food again Kristen, really? And the answer is yes! I love chinese food, especially when it's semi-healthy and super delicious. I got this recipe from Skinnytaste, one of my favorite recipe websites. I left out the mushrooms because I used them the night before, whoops! Enjoy everyone, I promise you'll love this!

Ingredients:
Sauce
  • 1/2 cup reduced sodium soy sauce (I used Tamari) 
  • 1/2 cup reduced sodium chicken broth
  • 1 tablespoon fish oil 
  • 1/2 tablespoon rice wine
  • 1 tablespoon cornstarch
Zoodles
  • 3 zucchini
  • 8 ounces chicken breast, cut into strips
  • salt
  • 2 teaspoon coconut oil 
  • 3/4 cup slices bok choy
  • 1/2 cup shredded carrots
  • 5 scallions, cut into 1-inch pieces
  • 1/2 tablespoon ginger 
  • 2 garlic cloves, chopped
Directions:
  1. For the sauce – in a medium bowl, combine the chicken broth, soy sauce, fish sauce, rice wine and 2 tablespoons of water. Whisk in the cornstarch until smooth.  
  2. Using a spiralizer fitted with a shredder blade, cut the zucchini into long spaghetti-like strips. If using a spiralizer, use kitchen scissors to cut the strands into pieces that are about 8 inches long so they’re easier to eat.
  3. Season chicken with salt. Heat a large nonstick wok over high heat. When very hot, add 1 tsp of the oil and the chicken. Cook until browned on both sides and opaque throughout, 2 to 3 minutes. Set aside.
  4. Add the remaining oil, bok choy, mushroom, carrots, scallions, ginger and garlic. Cook until crisp tender, 2 to 3 minutes. Set aside with the chicken.
  5.  Pour the sauce mixture into the wok and cook, stirring, until thickened and bubbling, 1 to 1-1/2 minutes.
  6.  Add the zucchini noodles to the sauce, mixing so the zucchini is covered in sauce, and cook until the zucchini is tender, 2 minutes.
  7.  Add the chicken and vegetables to combine, then divide between two serving bowls.

I used lots of chicken :) 
So many noodles. Secret tip: Dry them with paper towels.

I love this ginger paste, it's so much easier than grating ginger
Throw it all in one pot. Here's hoping I get that Wok we registered for!

Happy Birthday!

Today is TWO of my bridesmaids birthdays! How crazy/awesome/fun is that?! Callie and I met our first semester in college and Alyssa and I met our first year in law school. Needless to say, these girls have been through everything with me and they still love me. These two girls are strong, hilarious, kind and deserving of all your birthday wishes!
To my two February 4th birthday girls, HAPPY BIRTHDAY, I hope you have the best day. I wish I was with both of you to celebrate and drink copious amounts of wine. How about I make it up to you on May 9th or in Vegas? I love you both. xx

The Bachelor: Season 19: Oh, the Bachelor.

Are you getting sick of these yet? No? Good because Bachelor Mondays are my fav! At this point, we're getting to 'know' the girls pretty well right? Since we know that Britt doesn't shower, Carly's eyebrows are over-plucked and Ashley I cries a lot, I figure it's time to get to know our Bachelor. Here are 9 questions I wish I could ask Chris Soules and for fun, some classic quotes I just couldn't resist. Oh, and a picture to catch all of you up on the losers, aka the girls that got kicked off.

Nine Questions I want to ask Chris Soules:
  1. Why is your mouth so small? 
  2. Who's idea was it to go to a love guru? 
  3. Why do these girls think it's a good idea to 'come back' and 'fight for you?' Were you really going to give Jordan a chance?
  4. Did Britt take a Xanex? Or how did she get over her extreme fear of heights? 
  5. Is nap actually a keyword for sex? 
  6. Who dresses you?
  7. Do you believe Kelsey? Or do you think she made up the story, like we all do?

Weekend recap + Believe in the Sparks!

This weekend was a blast. After a long, long January, a calm weekend was just what I needed. And, being from Arizona and not being in Arizona for the SuperBowl/Phoenix Open was such a bummer, so Adam and I knew we had to make up for it! Friday night Adam and I made home-made pizza, drank wine and caught up on our recorded TV shows. Saturday we skied with friends and ate fabulous Mexican food. Sunday we woke up to a winter wonderful, we rooted for the Patriots in the SuperBowl with some friends, ate great appetizers and drank delicious beer. What a weekend. I hope your weekends were great too! It's Monday, let's do this.

4. Henry the snow dog. 5. Waking up Sunday morning to a winter wonderland.

Happy February!

Sometimes life just kinda sucks. There are things that happen, beyond our control, yet they seem to force us in a certain direction, sometimes a direction we weren't planning on going. Life recently has been tough and I'm really learning to trust in God's plan for my life instead of attempting to create my own plan. I feel very lucky to have the best fiancé, family and friends to lean on. Until I figure life out, I'm sure glad we're given new months to 'start' over,' lots of Bible verses to keep reading and One Tree Hill quotes to get us through :) Happy February everyone!

Saturday Sessions.

For christmas, my wonderful brother and sister-in-law got Adam and I tickets to Sam Smith. We went this past Monday and it was the best concert I've seen in the longest time. I can 100% say that his voice was better in person than on his album. If you have the opportunity to see him live, you must go.

So, everyone knows Sam Smith's songs, but I came across this version of his song the other day and it's great too. For today, since it's Saturday and you can be as lazy as you want, I suggest you go listen to Sam Smith and all his songs and then go listen to this song. Enjoy people. I hope your Saturday rocks!

Recipe: Bread.

Yes, you read that title right. I made bread, paleo bread! This is a huge break in the paleo lifestyle for me. Bread is definitely something I've been missing and I'm really glad I found a delicious recipe for those moments when all I want is a sandwich. Now, warning, just because it's paleo doesn't mean it's as good for you as green veggies :) but as my dad has always said, everything in moderation. So when you're craving bread, you go girl, you make that paleo bread and you love it.

The recipe was pretty easy and my house smelled incredible. I'm pretty sure there is nothing better than the smell of bread baking in the oven. Maybe the smell of red wine while you're baking bread, but regardless, bread. (if you're counting, bread was said 9 times, now 10 times in this post, you're welcome).

Okay, what you've been waiting for, the recipe!

Ingredients:
  • 3/4 cup almond butter
  • 5 eggs
  • 1/4 cup coconut oil, melted
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1/4 cup ground flaxseed meal 
  • 3 tablespoons coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt 
How to make:
  1. Preheat oven to 350 degrees. 
  2. Line a loaf pan with parchment paper. 
  3. In a large bowl, combine almond butter (I heated mine up a bit to make it easier to stir), eggs, coconut oil, honey and apple cider vinegar together with a hand blender. 
  4. In a separate bowl, mix together the flaxseed, coconut flour, baking soda and salt. 
  5. Mix the dry ingredients into the wet ingredients. 
  6. Pour the dough into the prepared baking pan. Bake for 30 minutes until browned. 
  7. Remove from oven and allow loaf to cool for 10 minutes. Remove from pan and cool on a wire rack. 
  8. Enjoy for up to one week. Store in an airtight container in the refrigerator.

I think the secret ingredient is the flaxseed, it's so good.

Spicy Chicken Sandwich. 
I used the recipe for the chicken from my buffalo chicken wraps. 

Ingredients for sandwiches: 
  • 1 pound chicken 
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • avocado
  • lettuce
  • goat cheese
  • tomatoes 
How to Make: 
  1. Mix the chicken with all the spices. 
  2. Heat a large skillet with 1 tablespoon coconut oil. Cook chicken about 3 minutes on each side. 
  3. Make sandwiches! 
  4. EAT! Enjoy!

100 DAYS + some #tbt

Happy #throwbackthursday everyone! It's almost the end of the week, which means it's almost the weekend! Get ready for a super mushy post everyone because that's exactly what this is and that's exactly what I like! 

Today marks 100 days until I am officially a Mrs! 100 days until the official name change. 100 days until the biggest day of our lives! If you cannot tell, I am so pumped. In honor of the 100 day wedding countdown, I thought I would post some of my favorite throwbacks with Adam. It's been a fabulous 4+ years and I cannot wait for our wedding!

Flourless Banana Pancakes

Banana pancakes. No, not that stupid I mean creative Jack Johnson song, I mean (flourless) banana pancakes. Adam and I had a super lazy Saturday, made some Nespresso lattes (with almond milk) and settled in with these pancakes. I really have nothing else to say about these except you will love them, they are delicious and when you make them, please share your pictures! Enjoy everyone. These are the best. Here's the original, I changed it a tiny bit, so my recipe is below! Ours made about 10 pancakes!

Ingredients: 
  • 2 cups ripe bananas (about 2 large bananas)
  • 2 eggs
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon almond butter
  • pinch of salt
  • coconut oil for frying
How to Make: 
  1. In a large bowl, mash the bananas using a potato masher or a fork, leaving some small chunks, I prefer big chunks. 
  2. Whisk together the eggs, vanilla, baking soda, cinnamon, almond butter and salt.
  3. Heat the oil in a pan on medium low and spoon approximately ¼ cup of batter per pancake into the pan. 
  4. Cook for about 5 minutes on each side or until it feels slightly firm. 
  5. Top with almond butter and berries. Or homemade maple syrup, or bananas and honey, or hell, grab the whipped cream and chocolate chips. I don't care what you top it with, these are so good that everything will taste good! 
  6. Enjoy!
