Let's reminisce shall we? When I was in college, my roommates and I would literally eat jars of pesto slathered on top of tomatoes. Breakfast, throw some pesto on eggs. Lunch, pesto on anything you could find in the fridge. Snack or any other meal, pesto. We would buy the large jar at Costco once a week, I wish I was kidding.
Safe to say, my obsession for pesto faded quickly from pure overdose. It's been years since I've had pesto. Minus the pesto pizza from Oregano's. But that doesn't count.
I saw this recipe on one of my favorite blogs, Ambitious Kitchen and I knew I needed to try it. Ps. If you're looking for great recipes, you gotta check her blog. It's amazing. I modified her recipe a little bit, just to fit our preference and I made my own paleo bread.
I made this recipe for dinner on Monday night and I had it for lunch Tuesday and we had it for dinner last night. My paleo obsession is back people and I'm ready to push my obsession on to you. What's an obsession if you can't share it with your friends?
Three things I love about this recipe: it's (fairly) easy, its colorful and it's so damn delicious. Adam usually isn't a left over lover, but he actually volunteered to eat left overs last night for dinner. This is a huge win in our household. Ps. Ingredients:
- 3 chicken breasts
- 4 tablespoons raw pepitas (green pumpkin seeds)
- 1 ripe avocado
- 2 cups packed basil leaves
- 2 tablespoons fresh lemon juice
- 2 small cloves garlic
- 6 tablespoons water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/4 teaspoon crushed red pepper flakes (more for more spice)
- Shredded carrots, sliced tomatoes, sliced cucumber, pickles or any other garnish that tickles your fancy
- Cholula or a great spicy mustard
- Bread of choice - or my paleo version!
How to Make:
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper Add chicken breast and generously season with salt, pepper, dried parsley and a touch of cumin.
- Bake for 35 minutes or until fully cooked. Shred chicken with two forks; set aside.
- While chicken is cooking, heat a large skillet over medium heat. Add the pepitas and toast until just barely golden; stirring frequently so they don't burn. This should take about 5 minutes.
- Immediately transfer to the bowl of a food processor and add in avocado, basil, lemon juice, garlic, water, chili flakes and salt.
- Process until smooth.
- Add pesto to bowl with the chicken and mix to combine.
- I pre-made the bread (recipe) below so make that sandwich. If not, grab some delicious bread and load up.
- Enjoy, Eat and Repeat!
Let's talk bread. The bread makes the sandwich. I LOVE bread. It's my favorite food. Okay, maybe not my favorite, but I love it. Throughout the process of eating paleo, I've tried a lot of paleo bread recipes, some major fails and some wins.
This is my go-to bread recipe - it's the bomb.

Ingredients:
- 3/4 cup almond butter
- 5 eggs
- 1/4 cup coconut oil, melted
- 1 tablespoon honey
- 1 teaspoon apple cider vinegar
- 1/4 cup ground flaxseed meal
- 3 tablespoons coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Preheat oven to 350 degrees.
- Line a loaf pan with parchment paper.
- In a large bowl, combine almond butter (I heated mine up a bit to make it easier to stir), eggs, coconut oil, honey and apple cider vinegar together with a hand blender.
- In a separate bowl, mix together the flaxseed, coconut flour, baking soda and salt.
- Mix the dry ingredients into the wet ingredients.
- Pour the dough into the prepared baking pan. Bake for 30 minutes until browned.
- Remove from oven and allow loaf to cool for 10 minutes. Remove from pan and cool on a wire rack.
- Enjoy for up to one week. Store in an airtight container in the refrigerator.

Happy Hump Day friends! Have you noticed how many amazing songs are on the radio right now? Whatever genre you prefer, there are amazing new songs. Maybe artists feel the same way I feel about spring so they're in the mood for new jams. New year, new jams.
The only good part about Denver traffic is that it gives me so much more time to listen to my sons while driving. Driving, music. Running, music. Work, music. My co-workers have heard me sing all day every day before. I'm not ashamed, even if I am a little tone deaf, okay maybe a lot. Last weekend we had some amazing temps so Adam and I made cocktails on the patio with an amazing Spotify playlist of new music. Is there anything better than patio cocktails and great music? Nope.
My friend Alyssa and I are constantly sharing music. Granted, most of the time, she's already heard what I consider new, but she is my go-to for all the newest music. Sometimes, she sends me rap songs called Swalla that I have to question, but 99.9% of the time, I'm obsessed with everything she sends. Just this am, I texted her, "I need new music!" and within 3 minutes, I had 14 new songs to add to my playlist. Shoutout - thanks lys!
You guys can thank her for a lot of the songs on the playlist. Not really the country, those are mine. But I think you'll find an amazing variety to this list. I have a feeling this spring jams playlist is gonna take me all the way through fall.
These Dolce Vita mules are the best. I wear them everywhere and I try to wear them everyday. I had them on to go to work today and Adam told me they were too casual. So maybe not everywhere, but I try.
And my Madewell jeans, I cannot say enough about them. I know you guys hear me talk about Madewell all the time, but I'm obsessed. They're skinny, shorter, perfect for spring time jeans. They have a little bit a stretch, but not too much. You can shop all the good stuff below.
Happy Wednesday Friends, tomorrow I'm planning an online coffee date. It might not make sense now, but I promise it will tomorrow! We're officially half-way through the week! Hooray!

Happy Wednesday my friends! I hate apologizing for my lack of blogging, but here I am aplogizing. So sorry! Life has been hectic and work even more so, meaning the blog has been put on the back-burner. I love Wednesdays. Is that weird? It's usually a busy day but it's right in the middle of the week. At this point you've either had a great week and you've got momentum moving forward or you have two more days in front of you to change your perspective. Plus, we are officially half way to the weekend. Win!

Happy Wednesday everyone! With Adam having the day off Monday, this week is flying! 3 days until the weekend and 3 days until we jet off to Omaha to celebrate our wedding shower with our family and friends (hooray!)!

Happy Wednesday everyone! I don't know about all of you, but this week is crawling for me. Maybe it's because we're going skiing this weekend, or maybe because last week was a holiday, I don't know, but I'm excited it's Wednesday!
Okay, on to the guilty pleasure. So, I love TV. I know, who doesn't right? But I especially love all singing shows. You're right, this is so embarrassing and trust me I get made fun of for it, but that's why it's my guilty pleasure! I've been watching American Idol since 8th grade and haven't missed a season yet. I love the Voice, America's Got Talent (really only the singers), I even love that accapella show Nick Lachey used to host over the holidays.
Well Monday night on The Voice all the contestants sang Nick Jonas' new song, Jealous. Oh yeah, my other guilty pleasure? Boy Bands. If you haven't heard Nick Jonas' song you're in luck, it's below :) But seriously, you'll love this. (Old) Boy Bander + The Voice + Gospel choir? This week is turning around!
