Guys, it has been a week. Monday we moved our office into a new office and needless to say the transition was not smooth. Computers have been down, copiers aren't working and moving just isn't fun. But, our new office is so pretty, right in Denver and it will be a great move once we work out all the nitty gritty details.
On the bright side, it's Thursday and it's National Coffee Day! I love Thursdays. They are like the happy hour to a great dinner. Everyone is in a better mood than yesterday as we wind down towards the weekend and this weekend my bffff Coti and Jen are coming into townnn!
They both have never been here, so I cannot wait to show them around! Just wait for my Denver-Beginners Travel Guide next week! Today I cannot wait to share this incredible recipe with you! IT is no secret that life is busy and time is of the essence. But, what we eat is also a huge factor in how we feel, work and get through that busy life.
This is where my perfect breakfast scrambler comes in. Remember as kids when your mom used to say you were having breakfast for dinner? Was there anything better? Sure, when I was 7, breakfast meant waffles or pancakes with bacon. While my love for pancakes hasn't diminished, my desire to eat a tad healthier has.
This is where the scrambler comes in. It's ready in under 30 minutes, filling, full of flavor and makes enough for leftovers. Deal. We've been making variations of this for years, but I've finally fine tuned it to this final piece. But, the best thing about this, is you can use everything you have! Look through those veggies drawers people!

Ingredients:
- Really good sausage. I perfer non-cooked and then cook the veggies in it. (There is this amazing Colorado brand that we LOVE! Plus, it's spicy)
- 1 sweet potato, diced
- 1 onion, either diced or cut into circles
- 1 bell pepper, diced
- handful of mushrooms
- 4 eggs (or if you have a hungry husband, 6)
- 1/2 teaspoon Cumin
- pinch of salt and pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- State here if you used un-cooked sausage. Cook the sausage until fully cooked. Remove and set aside.
- Start here if you used pre-cooked sausage. Add sweet potatoes and cook for about 10 minutes. This will vary on how thick your pieces are.
- Add the onions and bell peppers. Cook for about 5 minutes or until tender. (If you are using pre-cooked sausage, add it in now to heat up).
- Add the sausage back in. Stir. Add in the mushrooms and the seasoning. Cook until tender.
- Now the egg, you can do this multiple ways. I break all my eggs in a bowl, mix them and then pour them into the pot with everything. Some people like them separate. So use a separate saute pan, make your scrambled eggs and then mix.
- I hate doing dishes, so I prefer the one-pot method. It does take a little longer for the eggs to cook since there isn't as much pan.
- Top with a little sriracha or if not-paleo, cheese!
- Enjoy!

I mean, that is a ton of mushrooms.

Let's talk about WEEK THREE! Like last week --my thoughts are in black and Callie's are in blue.
- Loving: How my body feels. My joints & muscles don't hurt and I just feel lighter on my feet. Digestion finally on point! Yes!
- Feeling: Good! I am still craving sugar though and I would hope that would go away! Great! I went through an entire hot power yoga class without having to chug water. No thirst!
- Anticipating: It being over. That's negative, but I am anticipating implementing the water challenge into my normal life and seeing if I can keep up.
- Enjoying: Writing this post :) Inspiring others - other teachers and my fiance are doing it! My fiance even wants me to get him a jug!
- Working on: Callie and mine are the exact same - finish earlier in the day.
- Hating: How much I pee and how water full I get. That it seems harder to get it done this week.
- Struggling with: Getting it done before 6pm. I get lost in the day and forget! Peeing while teaching, but thank god I'm used to peeing on a schedule!
So, Callie said this to me in our weekly catch-up and I LOVE it. "This is not up for debate, the whole world knows we need to drink more water. This is a great chance to inspire others!"

This weekend Adam and I surprised my dad for his 65th birthday! It was so fun getting to spend an entire weekend just hanging with my family. There was nothing planned besides a nice dinner. We sat around, watched football, played with our nephew and hung out with each other. Plus, it was 85 degrees in Arizona which you know is just amazing weather.
It was a quick weekend but a great weekend. We are already counting down until our next trip. Let's look at pictures!

In the spirit of full disclosure I have a secret to tell you. Friday, I did not complete the gallon challenge. I was working in Grand Junction and only drank 64 ounces. Bah. But, to be totally honest, I felt like crap. I could totally feel my lack of water. I felt more tired, lethargic and just not as great.
So, while I missed a day of drinking the full gallon, at least I learned a little bit about the positives it's doing for me!

- Anticipating: Weight. I am noticing a difference and hope it continues! Hoping my digestion gets super good!
- Enjoying: All the comments I get when I carry my jug, and are you ready for this - maybe TMI, but a super light period, 3 days. WIN. My kids counting m sips and reminding me to drink!

A little Lola water challenge inspiration for ya!
Happy Monday lovies! I hope your weekend was wonderful and full of relaxation. Mine was great because we didn't do much. I did get to meet my girlfriends new baby! She's only 9 days old and so perfect. I saw Bridget Jones Baby, which, if you love the others, you will love this! I laughed and cried, it was so great! Now that I look back, there was a lot of baby stuff this weekend. Hm.
Great dinners followed by great cocktails made for a struggling Monday. But here we are. Only 5 days until the weekend AND it's finally fall this week. That just means I'm more than justified in putting up my fall decor all while sipping something pumpkin flavored.
This recipe is inspired by my love for making food I can eat for days after. Bringing left overs for lunch is so much more enjoyable than eating a larabar. I found the original recipe from Eating Bird Food. Brittany is AMAZING and blogs some incredible recipes. She doesn't cook exclusively paleo, but her recipes are always leaning towards the healthy side and DELICIOUS. Her recipe for the chicken salad is here.
Below you'll see I switched it up a little for our taste preferences and to follow paleo.
Before we start can we talk about shredding chicken. It's in this recipe (spoiler alert) and as much as I love eating it. I hate it. I hate it so much that when I make bets with Adam on sports and random crap, I tell him that if I win, he has to shred the chicken.
And, the thing that really bugs me, is in recipes it's hidden in the instructions. Do this that this that shred chicken. No-one accounts for the 25 minutes it takes to shred 3 chicken breasts with 2 forks. My hands cramp, I start to sweat and I lose all interest.

I found this great paleo mayo at Target and its delish so if I have to, I use that. Just please don't tell Adam I sneak mayo in some things!

Ingredients:
- 4 cups shredded chicken (this is about two large breasts)
- 6 tablespoons almond butter
- 4 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 2 teaspoons dijon mustard
- 1/2 teaspoon salt
- 2 cups celery, chopped
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 1/2 cup onion, diced (use red if you can, but yellow is good too!)
- Butter lettuce, bread or wraps to eat it with. Or a fork. Let's be real, it's that's good.
- Shred the dang chicken. Get this part out of the way. (To make shredded chicken, place chicken in a saute pan. Cover the chicken with water. Bring to a boil. Reduce and let simmer. Takes about 25 minutes. Flip the chicken half way through.)
- Make the dressing. Mix the almond butter, olive oil, apple cider vinegar, mustard and salt. Taste it. Last night, ours tasted too much like almond butter, so I added a little more apple cider vinegar and a titch of salt. This is up to your taste buds!
- In a large bowl, mix the chicken, celery, cranberries, almonds and onion. Don't be afraid to add other things. I used some seeds last night. I even thought about adding red cabbage.
- Wait to toss the salad with the dressing until ready to eat. Toss, serve, enjoy!

I make a lot of chicken and chicken is so boring after a while. It was time to switch it up. My meal planning is usually done while I'm still laying in bed on Sunday morning. I was scanning through Pinterest when I came across this amazing salmon recipe!
When I told Adam I was making salmon, his first question was whether I was going to try and recreate my horseradish salmon. If you are new around here, you know that was the worst idea I've ever had. Feel free to try to recreate, but I would suggest starting with the recipe below, first.
I knew I really had to up my game or else I'm pretty sure Adam would never even look at salmon again. That is when I stumbled upon Denise's blog Sweet Peas and Saffron. She makes incredible recipes, incredible! This one is no different. Her chili-rubbed salmon is here!
I love pretty much anything and everything that has avocado in it. You name it, I love it. Expect for avocado ice-cream. I haven't been able to jump on that train yet. One of these days, I am totally going to try, but for now, I'll just stick to avocado salsa.

Salmon Ingredients:
- 2 salmon fillets
- 2 tablespoons olive oil
- 3 tablespoons coconut sugar
- 1 1/2 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 avocados, diced
- handful of chopped cilantro, about a 1/2 cup
- 1 cup cherry tomatoes, cut in half
- juice of one lime
- 1 teaspoon olive oil
Ingredients:
- Pre-heat oven to 425. Cover baking pan in tin foil.
- Rinse salmon and pat dry. Make sure you get all the bones out!
- Brush salmon fillets with olive oil, salt and pepper (light!)
- In a small bowl, combine brown sugar, chili powder, ground cumin and pepper. Spread generously over the salmon fillets.
- Bake salmon 15-18 minutes, until cooked through.
- For the salsa - combine all ingredients and serve immediately.
So many amazing spices!

Needless to say, I redeemed myself in Adam's eye with this salmon recipe. He even told me it was restaurant quality! Guys, that is huge!

Week one is over. We made it! Let me just start by saying, props to all of you who already drink a gallon of water of day. You people are champs. If I wasn't doing a challenge, I probably would not do this. But now that I am doing it, I'm glad I am. I am sorry this is a day late! But hey, life and gallon jugs get in the way some time.

- Loving: How my skin looks. I thought it was going to get worse, but honestly it's clearing! My skin looks brighter, plumper and overall just better. A little inside - I usually wear liquid foundation and I stopped about 3 days ago because I don't think I need it! How I feel and how I am sleeping!!
- Feeling: Great. Honestly, I feel amazing. The first few days I felt a little bloated but that has gone down. I have more energy and overall, feel great. So much more energy and so much better sleep!
- Anticipating: Seeing how drinking water changes my weight. I haven't changed anything except the water. Still eating clean, working out and drinking tons Interested to see if it plays a major key in weight loss. Seeing my skin clear. It kind of looked worse to start, but everything has come to the surface and now it looks so good!
- Enjoying: All the comments I get when I carry my jug. Sleeping, I've been sleeping like an angel!
- Working on: Starting to drink earlier in the day and finish the gallon before 5pm. Finishing drinking by 6pm so that I don't pee all night.
- Hoping: These next three weeks go faster than this first week. That my digestion gets better. It's good, nut not great yet.
- Hating: How much I pee. I usually pee like twice a day. This 8-12 times sucks. But, my pee is clearer. Is that TMI? I don't care, we're all friends here!
- Struggling with: Peeing at night. So far, the daily pee tally is between 8-12 times a day. It's miserable. And, remembering to drink. I've had quite a few chug sessions. Drinking in the morning. I am way better at drinking after 1pm.

Thursday, the BRONCOS played their first game and the first NFL game of the season last night and WON! Oh, how I love the Broncos and I love how alive this city is during game day. I don't love the traffic, but I'll take it any day to root for my Broncos.
Adam is running in a Tough Mudder this weekend. All I know is that he will run through an electric field and get shocked. Don't ask me why he volunteered for this, but man am I proud of the training and dedication he's put in to this. He is going to rock it.

Ingredients:
- 4 large chicken breasts
- 3 tablespoons olive oil
- 3 garlic cloves, crushed
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 3 cups chopped fresh strawberries
- 1 cup chopped fresh basil
- 4 tablespoons balsamic vinegar
Instructions:
- Begin by heating a large skillet to medium heat. Add olive oil and garlic, cook for 2 minutes or until fragrant.
- Prepare your chicken breasts. Salt and pepper each side, add to pan.
- Cook for 5 minutes per side or until cooked through. Set aside.
- Meanwhile, prepare the topping. Toss together strawberries, basil, balsamic and 1 tbsp olive oil.
- Top each chicken breast with strawberry mixture, and salt and pepper to taste. Add additional balsamic glaze or balsamic if needed. Serve immediately.
- Enjoy!

It is no secret that I love snacks. All snacks. I don't discriminate. I'm lucky I work at a desk with people in and out all day or else I would sit on my couch and eat snacks. It's my thing, I'm not ashamed.
I've said it before, paleo makes snacking a little harder. There aren't as many options and I am not a fan of nuts, which is a lot of people's go-to's. So I'm left with LaraBars. In an effort to combat the snacking blues, I've made some delicious paleo snacks in the past. I've made paleo twix (which were amazing people! I've made coconut energy balls. Kale Chips and Chocolate Truffles.
Don't get me wrong, I am a huge fan of all these recipes, but while delicious, they all require some time and effort.And ya know what, sometimes I just do not want to cook, bake or prepare anything.
Sometimes I just want to open my my pantry and grab a snack. Cue, the That's It bar! If you haven't heard of the That's It bar, let me tell ya a little about them.
1) These bars are delicious 2) they are paleo and 3) they are only TWO ingredients!
Apple + blueberry, strawberry + apple, pineapple + apple. Those are just to name a few. The cool part, you get your full daily suggested fruit serving in just one bar. They are such a delicious treat and the perfect mid-afternoon snack.

Let's talk about water. I know what you are thinking. Why would I want to talk about water and how boring is this subject. Before you jump to reading your next blog - I promise this won't be boring. Plus there is a challenge involved. Everyone loves winning right?

The way the challenge works is simple --> drink a gallon of water a day, post your pics on Instagram (with the hashtag above), share your results, share your thoughts. Seems simple enough right? Just to put it in perspective, a gallon is 4 Nalgene water bottles. FOUR.
One reason I was super excited to start this challenge was due to some dizziness I was having. Let me stop you there, I am not pregnant. I woke up one morning so dizzy I could barely stand. After a week of this, I went to the doc, and she told me I was slightly dehydrated. My first thought, how was this possible? When I really thought about it, I realized I really only drink water before bed. Coffee in the AM, la croix for lunch, wine and water dinner, water before bed. Apparently that isn't enough. Three weeks of being very conscious of my water intake and the dizziness was gone. I was sold. Then Callie told me about the water challenge and here we are people.

- Toxin release: Especially needed after this long labor day weekend.
- No more dehydrated skin: aka your wrinkles and fine lines will be filled in more. Sunspots can even start to fade (because they can also come from dehydration)
- Lessening of cravings: Meaning you are fuller longer and with less food. Less of a craving for snacking. Did you know 70% of the time we think we are hungry, we are actually dehydrated?
- Clearer skin: yes please!
- Clearer pee: This kind of goes with number one, but keep those kidneys clean and help them do their job.
- Less constipation and better digestion: cute right?
- Helps energize your muscles! Working out a ton but not drinking a ton? This will help with your workouts!
- Helps with headaches, migraines and moods:
- Beats bad breath: Gotta love this.
Some benefits aren't pretty, but dang, it will be helpful. Callie and I have also been super stressed with work (& Lola) so we've seen some more breakout than usual. Time to get rid of those!
In a month of drinking a gallon of water, here is what we should see:
- Week 1: All of our toxins will come to the surface. And the worst part, our skin might get worse. It's normal because our skin is releasing all the toxins built up in our body.
- Week 2: Week two will be easier than week one. We will feel much more awake and have fewer cravings for sugar or salt or whatever our cravings are. I'm excited for this because I crave salt like you wouldn't believe. I've excited to see how this much water curbs my cravings.
- Week 3: By this point, our skin should really start to clear. Our dark circles should fade and we should sleep better. And for the non-pretty part of water drinking, when we wake up and go to the bathroom, our pee should be nowhere are dark as it is.
- Week 4: Drinking a gallon just became a habit (21 days) and it should feel like second nature for us to drink this much. It's our new normal! Clear skin, clear pee, cannot lose.
Here's what I can promise. A weekly blogpost every week documenting what we've seen, what's changed, how we feel. Also, I know this is weird, but we're going to track how many times we pee.

Happy September everyone! It is absolutely crazy to me how fast this year has gone. It seems like just yesterday I was in the middle of buying a house and now we've owned said house for 6 months! Nuts, people, nuts.
I am the first to admit that I love fall and everything fall, but I do not love winter. It's a tough life, I tell ya. I am already basking in the smell of pumpkin spice everything, boots and I just bought two sweaters. I'm soaking in the cool air, even if tomorrow it's supposed to be 89 degrees.
I'm drafting football teams, cheering for college sports and drinking darker beers. We are getting wild. In case you need some laughs, my girl B, wrote this post for me a few years back and it's hilarious. It's why fall is the worst. I die. She's too funny.
Instead of why fall is the worst, let's talk about why it's the best, all the things I'm loving and a little update. We've got a lot to cover, we better get moving.
PLUS, starting Tuesday I have a blog challenge. Think you can keep up?
- Boots. Am I right? Tall boots, short boots, booties. I am currently swooning over these Jeffrey Campbell booties. I totally need them. Oh, and these Stuart Weitzman boots.
- Pretty Little Liars. I cannot stop watching. It's my favorite show. I cannot stop. And, this is the last season, so I'm soaking in every tween-drama has to offer.
- Lola and Henry. I love these little buns in my life. They are the absolute best. I want to adopt all the dogs and then wear this shirt.
- This song. Recently I've been obsessed with The Chainsmokers and then this came on my radio and I was in love! They are amazzzing! You loved that didn't you. Here's another by them that's incredible.
- This one is directed towards Adam and anyone over 50 (no offense), but you can now zoom in on Instagram! Hooray! It's part of the new iPhone IOS update! No more accidently liking a picture form 54 weeks ago when all you wanted to do was zoom. Welcome to the future people.
- Ya know what I love about fall? We're closer to the holidays and it's scientifically proven that people are happier. Okay. I don't know about scientifically proven, but Kristen-proven. People love getting happy hour because you can celebrate "the holidays" for like 4 months.
Let's get to September's Challenge. My paleo and health coach (not literally, but for real she is) Callie challenged me to drink a gallon of water a day. Lets stop here.
For those of you that know me, drinking water is a challenge. I don't like it. I prefer not drinking anything really, except wine. Ha, jk. But really. I understand the benefits of water, healthy skin, lose weight, ect ect. And honestly, I don't even think about it throughout the day.
It wasn't until about 5 months ago when I woke up and was incredibly dizzy. After doctors appointments, pregnancy tests (not pregnant people) I couldn't figure out what was going on.
Now, switch gears to a new house. We were looking at water filters when the sales guy was chatting us up and he said the water filter got rid of his dizziness. DING! Purified water for this girl and about two weeks later, my dizziness was 100% gone. Now, I drink a ton of water. So when Callie suggested this challenge, I thought hell yes. Let's do it.
We bought this gallon jug on Amazon - $10.25 and we will be drinking a gallon a day. The best part we're gonna live blog and tell you what we see, feel ect. Every Friday we will post how we are feeling about the challenge! Callie is hilarious so you guys are in for a treat.
