Overnight oats, I’m sure you’ve heard of
them, as they are currently all the rage, but have you tried them? I’ve been
reading about overnight oats on every blog, in every magazine and all over
cooking shows for the past 6 months, so I knew I had to try them! I know what you're thinking... Kristen, these aren't paleo! I know, I know, but they're healthy and delicious and I couldn't resist!
I made these
last Friday to make breakfast on Saturday a little easier and let me tell you,
they were fantastic. I looked around online for all types of recipes and after
finding tons of different recipes, I mixed and matched the recipes I liked the best to come up with this one!
Because it was Saturday, I made two bowls, since apparently I was going for
fiancé-of-the-year that day. Based on my fiancé's reaction when I served them, I think I’m going
to win! I hope you all enjoy these oats as much as I did.
Ingredients:
- 1/3 cup Steel cut oats
- 1 tablespoon chia seeds
- 1/3 cup plain greek yogurt
- 1/3 cup almond milk
- ½ banana
- 2 handfulls of bananas
- handful of cranberries
- 1 teaspoon cinnamon
How to Make:
- Mix together all the ingredients.
- Cover and place in the fridge overnight (or at least for 2 hours).
- In the am, top with sliced strawberries, some extra blueberries and maybe, if you're feeling frisky, some warmed up almond butter.
- Don't forget the delicious coffee!
- Enjoy!
I used Bob's Red Mill Gluten Free Oats
And... I used Bob's Red Mill Chia Seeds!
And, almond milk. You could use coconut milk if you prefer.

I've told you I love Lexi's Clean Kitchen... but did I tell you how much? Well I think recipe #2 in one week from her blog has to be some indication. Introducing fried plantains. I've never made these before so I was kind of hesitant. Everyone just kept telling me they're like bananas, so I thought, why would I want to make fried "bananas." Well, Adam has officially burned out on sweet potatoes, so I needed something else to make as a "carby" side. News flash, fried plantains are delicious and I'll totally be making them again! Plus, they're super easy to make. Enjoy everyone!
Ingredients:
- 2 yellow plantains
- 2 tablespoons coconut oil
- Sea salt
- Cinnamon
How to Make:
- Cut plantains into desired pieces. (Next time I'll be cutting mine thinner)
- Heat oil in your skillet until hot.
- Place cut plantains into the skillet
- Flip after 4-5 minutes
- Remove, transfer to plate with paper towels and pat dry.
- Add salt. (I kept the cinnamon on the side, Adam wasn't too interested it in)
- Enjoy!

It's our One Year Denver Anniversary! One year since we moved away from family, friends, jobs and a town we know and loved. This last year has been up and down and all over the place, but it's been such a good year. In one year we've moved, gotten engaged, started planning a wedding, tore an ACL, met new friends, revisited with old friends, got promotions, new jobs, lost jobs and we built a home and a life together.
Denver has really taught us how to be be there for each other when none else is. Not to say our friends and family weren't there... I'm talking physically there. Don't you worry, we FaceTime and text-stalk our families :) But when we first moved to Denver we knew no-one else. We had no family in town and very few friends. Denver was our chance to build our lives together, just the two of us. I think this last year has really prepared us for marriage. After all, while the wedding may only be one (amazing) day, I want our marriage to be the most amazing part and the most amazing 90+ years (hopeful thinking for an extra long life!). What I've learned in this past year is that a relationship really is give and take. There have been days where I'm struggling and need Adam and vice versa. We've learned how to really lean on each other and trust each other. Yes, we've been together for 4+ years and we've learned those lessons in the past 4 years. But there's something about being "alone" where you really learn how to trust and rely on that other person.
The decision to move to Denver was a hard one. A decision the two of us thought long and hard about. We cried over it, debated over it, wrote pro and con lists. But in the end, Denver was such a great decision for us. I'm so excited to see where the next year takes us. This one has been quite...eventful and I have no doubt our second year in Denver will be just as great, if not better. Here's to year two and 18 more days until we're married!

Happy Monday everyone! This past week I've been trying to look for new delicious recipes to spice up this paleo lifestyle. Sometimes it can get kind of boring. Life gets busy and I find myself cooking plain chicken and veggies too many nights in a row. If you've never been to Lexi's Clean Kitchen, you must go and dig through her recipes. They're delicious and fairly easy to make! I knew I wanted to make this one when I read pineapple in the title. I love it, Adam loves it, it's fresh and so delish. Enjoy!
Ingredients:
Ingredients:
- 1 pound chicken breasts
- 20 ounce can crushed pineapple
- 1 cup crushed tomatoes
- 2 tablespoons coconut aminos
- 1 tablespoon coconut sugar
- 1 tablespoon apple cider vinegar
- 2 garlic cloves, crushed
- 2 teaspoons grated ginger
- 2 teaspoons paprika
- 1 teaspoon chili powder
- 1/2 teaspoon sea salt
- In a pot, heat ingredients (minus chicken)
- Bring to a boil, then reduce heat and let simmer for 10 minutes.
- Remove from heat and let marinade cool.
- Cut chicken into desired cubes or strips. Place chicken into a bowl and cover with the marinade. Let marinade for up to 24 hours, as few as 2.
- Preheat oven to 350.
- Place entire contents, chicken and marinade into a baking dish.
- Bake for 20 minutes or until chicken is entirely cook.
- While the chicken was cooking, I made cauliflower rice.
- Once done, serve together and enjoy!
I let the chicken marinade for about 2 hours, next time I'm going for 24.

We drank wine, relaxed at the spa, mastered the 5-person selfie, told secrets and shared our lives. For some of us it had been years since we'd seen each other, for others it had been mere weeks but when we all got together it was like it had been no more than hours. Being in the presence of smart, kind, hilarious woman is so wonderful. I walked away feeling encouraged, happy, relaxed and so happy to have such wonderful friends in my life. Whitney gets married in 36 days from today and last weekend was a perfect chance to spend time together before she becomes a wife! I must apologize for my lack of blogging. I spent an incredible weekend in Scottsdale celebrating my best friends bachelorette party and as a result left my computer sitting on my parents kitchen table. Let me tell you, having your computer in Phoenix when you're in Denver makes blogging really hard. I promise I didn't forget about this little space of mine. The computer is in the mail and I promise I'll be back soon! Blogging on my iPhone is so not ideal. But to hold you over until recipes, weekend recaps and jams are back, here's a good quote from Paul Walker (RIP).

There's something you should know about me... there are three things I'm passionate about (well lots more, but for this post...lets say just three things).

I've ben watching American Idol since 8th grade when it started. Yes, I just dated myself, I'm 27 and proud. I bought Kelly Clarkson's first CD, I even voted for her. Well, last night Adam and I were catching up on American Idol on the DVR. I should say I was catching up while Adam read the WSJ. But Kelly Clarkson was the mentor. She was bomb, the contestants were fine and JLO looked gorg. But while watching American Idol I started looking for Kelly Clarkson songs (she has a new album out... I'll give you my thoughts on that later). But I found a song by Kelly Clarkson & John Legend. If you're new to this blog, you should know that I LOVE John Legend (see #2).

Happy Easter everyone! I hope you're enjoying the day, celebrating, eating great food, going on Easter egg hunts and spending the day with family and friends. Easter is always one of my favorite holidays. It always feels like a fresh start, the real beginning of Spring. This past weekend, Denver graced us with 80 degree weather. Blue skies, bright sun and cold beer was on tap for our Saturday. Because it was so nice, Adam and I decided to explore Denver a little bit and we headed down to Union Station. If you live in Denver and haven't been, or are visiting Denver, you must go. Union Station still has its original purpose, used as a station for Amtrack, but now it's been upgraded and has a hotel, tons of restaurants, bars, bookstores and the cutest flower shop. We spent the afternoon wandering around, looking in shops, sipping beer and enjoying our blast from the past.
Our first stop was at the Terminal Bar to get some of that cold beer I was talking about. It felt like we stepped back into time as we chatted with the bartender, sipped our beer and watched people venture in and out of Union Station. The Terminal Bar doesn't have food, but it offers the menu from Acme Burger and Brat. Just do it, order everything.
We spent about 2 hours wandering Union Station and soaking in all the sounds, smell and beer it had to offer. Next time, we're going to eat brunch at Snooze. We've been to the Snooze in downtown, but I cannot wait to sit outside Union Station sipping mimosas and eating eggs Benedict next time!
And make sure, the next time you're in Denver, you go to Union Station. It's worth all the time and energy it takes to park downtown :) I hope you fall in love with this city like I have.
