Happy Friday Friends! We made it! Is it just me, or is the week post a vacation the hardest ever? Wednesday seemed like Monday, I thought Tuesday was Thursday and all week I was super thrown off. But, it's Friday, its the weekend and I plan on enjoying every little moment. Plus, Denver thinks it's funny to snow today and tomorrow. So I'll be cozied up by the fire this week should you come looking. If you do come, bring wine.
Anyways, it's Friday and I have such a treat in store for you. It is the week of guest posts people but this guest post is my favorite. My best friend, Whitney is a bad-ass mama, wife, nurse and friend. Whitney and I have been friends for over 15+ years. She was the maid of honor in my wedding and I was in hers. We were roommates in college for a year, traveled the world together and we've drank a lot of wine and coffee together.

2. Baby Shusher: I never realized how much work “sssshhhing” is until I had Miss B, spoiler alert…..it’s exhausting! That’s when I was introduced to the Baby Shusher. It has become my go-to baby shower gifts that I buy for my friends--even if they haven’t registered for it. It literally ssshes for you and it’s small enough to toss in your purse for when you are out and about or place it by the car seat to help make getting around town easier. It is truly a must have item for all new moms.
I decided to try placenta encapsulation to help my hormones levels gradually regulate instead of quickly dropping post baby. I believe that it did allow my body's hormones to adjust at a better rate and I felt very balanced post-baby. I can truly say I never experienced any depression or big mood swings while taking my placenta pills. I highly encourage you to do some research on placenta encapsulation it's worth it!!
5. The 3 F's: These were a must have for me after having Miss B—Family, Friends and FaceTime. As a first time mom and a perfectionist, I knew that it was going to be really hard for me to ask for help and take "me" time. I encourage all new moms to do what I did and ask your family and friends to help keep you accountable when it comes to taking time for yourself. It might just be a phone call with your best friend or a longer shower than normal. Take a few minute to be alone and breath.

Happy Wednesday Friends! I am so excited for today's guest post. When I was in Omaha a few months ago, my girlfriends were talking all about sous vide. Cooking chicken sous vide, dessert sous vide. I literally had no idea what they were talking about, but they were both raving about how amazing their recipes turned out. Plus, they mentioned it was a time saver. I was intrigued.
Then, literally two days later, I was approached by Joe asking to share his favorite sous vide recipes! Talk about perfect timing. PS, Joe, if you're reading this, please come visit Denver, Adam and I would love to show ya around town. Without further ado, I'll let Joe do the talking.

I'm a huge foodie who loves all types of food – even chicken soup – but there's something I love even more: dessert.

Spring is here - I am so happy. The warm weather leads the way for an abundance of sunshine, beautiful flowers, crazy drivers (if you're a resident of a tourist hotspot) and tons of food. I'm a huge foodie who loves all types of food – even chicken soup – but there's something I love even more: dessert.
Cool, refreshing and often fattening, desserts
are music to my soul.
I get happy eating dessert, serving dessert and
watching people's faces light up when they eat dessert. But the one thing I am
not a fan of is the complicated desserts that take hours to make. I don't have
time to hover over a stove all day. I want to be out in the sun, too (I might
even visit Denver this year).
So, instead of buying the pre-packaged
goodies that are filled with bad-for-you ingredients, I am trying something new
this year. Sous vide.
It's an awesome way of cooking, and it involves
using water to make the perfect dessert. It sounds quirky, but trust me
when I tell you it's a hit at parties, family events or when feeding the kids.
My go-to desserts for the spring are:
1. Chocolate Covered Strawberries
Possibly the
easiest dessert on the planet to make, chocolate covered strawberries are
delicious, nutritious and take 20 minutes at most to make. You'll want to set
your sous
vide to 115F for this
recipe.
You'll need the following ingredients:
·
12-ounce
chocolate chips
·
1/2
tsp cinnamon
·
Strawberries
Some cooks
will add cayenne into the mix, too, but this is completely up to you. Now,
you'll want to place all of your spices and chocolate into your sealed bag, and
place it in your sous vide for 10 minutes. Remove the bag at this point and
massage the chocolate to ensure it's fully melted.
Let cool
slightly and then dip your strawberries into the mixture and set on parchment
paper, place in the refrigerator and allow to cool.
2. Rice Pudding
Were the strawberries too simple? If so, coconut
rice pudding might do the trick. This is one of the recipes that's difficult to
make on the stove and easier in a sous vide. You'll need quite a few
ingredients to get started, but first set your unit to 180F.
You'll need the following ingredients:
·
2 cups whole milk
·
1/2 cup arborio rice
·
1/2 cup unsweetened coconut (shredded)
·
1/2 cup sugar
·
14-ounce coconut milk
·
1 tsp ground cinnamon
·
1/2 tsp ground ginger
·
1/2 tsp kosher salt
You know how you normally have to hover over this
dish for hours hoping it won't come out too dry? Not with sous vide. Place all
of the ingredients into a bag, seal and set in the unit for four hours. Remove
when finished, and serve hot or place in the refrigerator to cool – it's your
choice.
When life gets busy, sit down and enjoy some rice pudding – it's fantastic.
3. Chocolate Chip Cookies
I love chocolate
chip cookies, but I can
never seem to get them just right. I love the gooey chocolate flavor and
texture, and when they're warm, they're to die for. I've found that making my
cookies in a sous vide has transformed the way I cook and made my cookies ten
times better.
Before we
get started, set your machine to 195F and gather the following ingredients:

cup all-purpose flour
·
2/3
cup brown sugar
·
1
cup chocolate chips
·
1
large egg
·
6
tbsp unsalted butter
·
2
tsp vanilla extract
·
1
tsp baking powder
·
Pinch
of salt
Mix your
baking powder, flour and salt in a bowl. Add sugar and butter into the bowl and
beat for 3 – 5 minutes until a light and fluffy texture is achieved. Add in
your egg and vanilla extract, and beat for another 3 minutes.
Once done,
mix until well combined, folding in the flour. Next, fold in the chocolate
chips and add the mixture into a greased cooking jar. Place the lightly sealed
jar into the machine for 3 hours before removing and allowing to cool.
Remove the
cookie "jar" contents gently with a knife and transfer the cake-like
cookie into a dish that will cook for an hour in the refrigerator.
Once cool,
cut the large cookie into cookie slices and serve. The idea and concept sounds
odd when reading it, but trust me when I say these cookies are mouth-watering.
Note: You may need to place the mixture
into numerous jars.

Happy Monday folks! I hope you had the best weekend. This weekend I was is in Omaha celebrating my brother-in-laws wedding! It was so darn fun. I'll have a full recap of the weekend on the blog later this week.
This post is 51% honest and 49% humor. So please take my sarcasm as it's intended. Recently I have been in a shopping mood. Maybe it's Instagram, maybe it's spring or maybe it's all the random shit I find online that I need right now. But whatever it is, all I want to do is shop, spend money and shop some more.
And, I'm turning 30 soon. I know I tell you that a lot, but it's a big thing over here in Kristen-land. I've been thinking about what I really want for my 30th for a while. For those of you who are 30, whats it like on the other side? I'm actually super excited to be thirty. I loved my 20's, but I'm ready to say sayonara and hello to a new decade.
Recently, my entire family has been asking me what I want for my birthday. While I don't think I'm a hard person to shop for, I've been told otherwise. I'm learning in my life it's easier to tell people what I want instead of getting something Ihate don't love and trying to return it. I'm trying to make it easier peeps. I would hate for people to think I'm like Rachel on Friends where she returns everything. I don't return things, I just shove them into my closet and find them when I move. Brutal honesty folks.
When I think about my 30th, I want things like, world peace, sunshine, happiness, acceptance, lots of love and lots of wine. But, since my family can't wrap sunshine in a box, I figured I'd better come up with some ideas.
So, to my fam-bam and whoever else wants to buy me gifts (see the 49% humor above) here is my
1. This Vacation Shirt from Madewell this ruffle dress and these mules. I'm so ready for a vacation somewhere, but it seems looking at vacation clothes is as close as I'm gonna get to an actual beach anytime soon. And, I am currently obsessed with mules. I legit wear mine every chance I get.
2. I really dig this boot butler. I mean, I don't have cowboy boots, but I'm sure my Frye's would love hanging around. That was a pun. When we first moved in to our house, we were so pumped with closet space. Welp, a year later, our closet is full. I think this would be a great remedy that way I don't have to fill up both guest room closets. In my defense, Adam loves clothes too. And shoes. So there, it's not just me.
3. This copper wire letter sorter. I don't really get letters, but I LOVE the copper, so I would totally put it to use. We're trying to re-do our kitchen and I want to add copper accents and I think this $10 letter holder would be perf. Now, can you guys start sending me letters? I'd love ya forever. Birthday cards are my favorite.
6. Wine all the time. This would totally come in handy. My fridge always has a bottle (okay, more than one) in it and this would totally organize my life. Anyone? This really does need anymore explanation.
7. These Gucci Princeton Slippers. They're on $995, so I figure one of you will buy me these right? I am a size 9 and really love the black. But the ones with the snake on the front would be good too. Thanks in advance! Oh and yes, I would totally wear these out of the house. Thanks!
8. This iPhone Nub holder. I love taking selfies and snapchat videos, ect. This would be so awesome because then I wouldn't drop my phone every other time I try to take a picture.

The something is usually a stick, a piece of dog food, but nope, it was an earring back. Even more reason I need this.

Last night as I was laying in bed writing this post, I showed Adam the picture I was putting on my Instagram and asked him if he thought it was cute. His response, "...super cute." I asked why he paused and he said, "You usually don't wear any color, so it's nice to see you in bright yellow." Welp, there ya have it people, even my husband recognizes how much I love black, and how much I need to branch out.
And, per my new years resolution, I was trying to wear more color this year, but apparently I'm failing. Resolutions start over every day right? I'll try again tomorrow.

Isn't that the worst feeling? I seriously thought it was Wednesday, which now means, my trip to Omaha and the weekend is one day further away than I thought this am.

I love a good tank that doubles as a work shirt and a going out shirt. Today, I'm showing you some of my favorite ways to style this shirt. Please remember, 1) I am an attorney, so pencil skirts are my go-to and 2) black is my favorite color. When I wore this to work the other day, my boss said, "yellow uh?" This all black thing seems to be a problem.
I heard something on the radio the other day and the guy talking said, "Why is is so easy to degrade people, diminish accomplishments or be rude, when it's so much better to be good?" Whoa. Right? Like, why is it easier for me to complain that the barista messed up my americano, than to grab a manager and compliment the barista when it's super delicious? Why do I follow girls on Instagram that drive me nuts, when there are tons of others to follow that will inspire.
Maybe it's our self-degrading nature. Maybe it's sin. Maybe it's us. Today, I'm focusing on the super good and the super important things in life. I'm making it my goal to pick out the good, not bad. Remember, we are in control our of own happiness. Let's start acting like it. Let's check out all the good stuff going on in the world. Maybe, if just for a minute, we can forget the bad.
4. Bloopers are the best. This weekend my dear friend Ryann took hours out of her Saturday to take pictures with me. Ryann is a mama to a 6 month old, wife, lover of Jesus and a great friend. I am so grateful for her and her picture taking skills. I'm lucky for Ryann and all my best girls.
5. The cutest little lady named Winnie, living in England was celebrating her 100th birthday with no family. However, thousands of strangers sent her birthday cards, 16,000 to be exact. A radio station sponsored a surprise birthday party for her, complete with gifts refreshments and cards. What a jem. PS What do we think about Winnie for a baby name? Too Wonder Years?
6. Three years ago today I passed the Iowa Bar Exam. Thanks to Facebook I get to remember some amazing memories. THAT is a great memory. I remember, it was three days before we moved to Colorado and I was in my in-laws home with my mother in law. I was using her ipad, watching GMA and I kept refreshing the page. When it clicked, I totally skipped my name and assumed I failed. Then I got the text from B that all three of us (my best friends and I) had passed. My mother-in-law poured the champs and that was the first of many glasses that day. Oh, what a day.
7. A North Caroline Sheriff's deputy was challenged by a young boy to a dance off. It was a running man dance off and is the cutest thing you'll see all day. You can watch the video here. In the same spectrum as cops, a little 7 year old boy with an incurable brain tumor got initiated at the Dallas Police Department as a detective. He was greeted at the station with the full royal treatment. He received a uniform and a badge. Be still my heart.
8. My brother-in-law is getting married this weekend. Is there anything happier than watch two people commit their lives to each other? I am so excited to be a party to their day. PS. Follow me on Instagram Stories to see all the behind the scenes and some of my favorite Omaha spots.

1. Ellie Kai has the coolest story. The company was started in 2011 in Hong Kong by designer Liz Hostetter. She started working with a tailor in HK to create her own designs. After friends saw her amazing clothes, cuts and colors she realized she needed to make a clothing line. And the name Ellie Kai? “Ellie” comes from an affectionate nickname Liz received while working with children in Fiji during her time with the Red Cross. And in many languages “Kai” signifies power, victory and water. When put together, Ellie Kai creates a beautiful, strong female role model to inspire and nurture us all. Rad right? 2. Today on the radio, I heard the best story about a group of people who make and assemble bombs, a bomb squad. They did the coolest thing for Easter. They used their bomb-making powers to create Easter eggs with sounds coming from them so deaf children could have an Easter egg hunt. If that doesn't make your heart melt, I don't know what will. How amazing.
3. American Doll made a doll for this little 10-year old girl with cancer and they gave the doll a prosthetic leg to match the little girl. They named the doll Hope. It was made to match her other doll, Faith, who has no hair to match the little girl who lost her own hair due to chemo. There are incredible people in this world people.

Happy Monday friends! How was your weekend? I for one, am feeling refreshed and encouraged. Easter is one of my most favorite holidays. It is so encouraging to hear the story of Jesus and the immense love He has for us. Regardless of how many times I hear the Resurrection story, I still cry and feel so overwhelmed by His Grace. It's amazing to to be so loved.

On the first day of the week, very early in the morning, the women took the spices they had prepared and went to the tomb.
They found the stone rolled away from the tomb,but when they entered, they did not find the body of the Lord Jesus.While they were wondering about this, suddenly two men in clothes that gleamed like lightning stood beside them.In their fright the women bowed down with their faces to the ground, but the men said to them, “Why do you look for the living among the dead?He is not here; He has risen! Adam was gone this weekend (don't worry he was back in time for church and Easter dinner!) but I had a nice relaxing weekend. I caught up on the blog, took some pictures (coming soon!), caught up with old girlfriends and got rear-ended. I bet you weren't expecting that update.
UGH. Is there anything worse than car troubles. Luckily no-one was hurt, but spending three hours on a Saturday night waiting for cops to write a report, exchanging info and just the overall hassle is the worst. I crawled into my bed Saturday night around midnight, exhausted.
But, like I said before. I woke up Sunday feeling refreshed and so blessed to spend a beautiful Easter Sunday with Adam. Until last year, we always went to Omaha or Arizona for Easter. But last year, with the rush of life, it didn't make sense to make the trek back home to either city. In brutal honesty, it sucks being away from family on the holidays. But we had to start being realistic about always traveling. We always make an effort to spend some time on Facetime on on the phone with our families on this day. But, we are making our own memories. We're building memories for our little family so that when we have a big family one day there is something special. It's different than the normal, but we're adjusting.
Anyways, to other things! I have so much to tell you guys.
- Can you believe April is halfway over! That is crazy to me. We are almost to May! This time two years ago, I was celebrating my bff's Bachelorette Party in Sedona. That recap is here if you're interested!
- On Good Friday, my amazing sister-in-law had her third baby, a BOY! She has two older daughters (they are the ones on my snapchat all the time!) and it is such a blessing to bring a boy into the family. Baby Boy makes my SIXTH niece and nephew. Can I just tell you how much I love being an aunt. There is nothing better than being called Aunt Kristen. Plus, watching my siblings have babies is the greatest joy.
- THIS weekend Adams youngest brother is getting married! Hooray! I am in the wedding and so thrilled to share in this amazing event. Nico, his future bride is going to be so stunning. I cannot wait to share all the details. Make sure you're following on snapchat and insta stories!
- I took some blog photos this weekend and I cannot wait to share them with you guys. Tomorrow on the blog, I'll be sharing my new favorite top from Ellie Kai. My darling gf Ryann joined me on Saturday and learned how awkward it is to photog me in public. We're both learning, but it was such a fun day together.
- I promise my Blue Apron review is coming. There is a lot to go through and I want to make sure I give you the full spectrum. The food is great, but is it worth it? I don't know, tune in later this week to find out!

When I lived in Arizona, my best friends and I used to sit at Starbucks forever and just talk. We even had a specific Starbucks where the barista's knew all of us and our orders. To date myself, I used to order a Grande White Chocolate Mocha with whipped cream. Those were the days when calories didn't matter and the more sugar the better. We had the same table at almost the same time. I like to pretend we were as cool as the cast of Friends.
In law school, my best friends and I had wine dates. Bottles of Pinot Grigio and Chardonnay, because all 4 of us couldn't agree on the same bottle of white. This is the time that we hashed through our lives, caught up on details and just spent time together.
Being thousands of miles from my best friends with them ranging all over the US, makes it hard to have my beloved coffee/wine dates. My current version of a coffee date is me driving in the car. If you're one of my bffs you know whenever I'm in transit, you are getting a phone call. Driving to work? Phone call. Home from Court or junior league? Phone call. Walking the dogs. Phone call. It probably drives my friends nuts, but it's my way of catching up.
Now, while I love chatting on the phone, nothing is as good as a good ole fashioned coffee date.
So, ya know what, we're gonna have a coffee date. Grab a cup of coffee friends, let's get to know each other.

If we were having a coffee date, I'd be drinking an grande Americano with a splash of cream and if I'm feeling spunky, half a packet of raw sugar. I came to realize that consuming over 400 calories for a coffee was a little too much. Plus, I die for the espresso now. I'd tell ya that life has been really busy. Adam is working a ton, I'm working a ton and life is taking us in all directions. I'd tell ya that we haven't had a weekend home just us two in over a month. I'd tell you that in the middle of May, I'm finding out some news that could be sad or happy. You'd tell me to trust the timing of my life. I'd tell you I'm trying.
I'd tell you that I'm dealing with Instagram insecurity. That's a thing, I just made it a thing. Comparison is the thief of joy is what you'd tell me and I'd feel better. I'd tell you that I've been doing two-a-day work outs because recently I just don't feel comfortable in my body. I'd tell you that I'd rather eat sushi or hamburgers every day instead of working out. Then you'd tell me I'm doing great.
You would tell me all about your job and your kid, if you have one. You'd tell me about the office gossip and who's sleeping with whom. You'd tell me about a really funny episode of Friends you watched last night and then we'd repeat lines to our favorite episodes until we're laughing too hard.
I'd tell ya that Adam is my saving grace and my stability. When Instagram makes me feel bad or I'm second guessing my body, he makes me feel like an Instagram queen. I'd tell ya that Lola is in her toddler stage and is a handful. She is currently chewing out our entire sprinkler system. She treats it like I game. I tell her leave it. She pulls out the sprinkler and then prances around the yard while I run around trying to grab it from her.
I'd tell ya that I'm turning 30 in less than two months but that I've been writing my blog post about those 30 feelings forever. You would tell me that 30 is the point in life when you stop caring about what other people think about yourself because you're comfortable in your own self. I'd say you're probably right. I'd tell you that my face is currently breaking out and my skin is terrible. You'd tell me abut your newest zit cream and I'd order it online while we sit there.
I'd tell you even though our life is busy and crazy, I'm so happy. I would tell you I'm content. I don't always know where I'm going, but I'm happy with where I'm heading. Our coffee date would go on for the next 3 hours at least, wishful thinking, and we'd continue talking about everything under the sun. Including the rumor that Sienna Miller is dating Brad Pitt and what we think Bradley Cooper's new baby looks like. We'd settle on them probably dating and a gorgeous baby.Happy Thursday friends, thanks for having coffee with me today.

Happy Hump Day friends! Have you noticed how many amazing songs are on the radio right now? Whatever genre you prefer, there are amazing new songs. Maybe artists feel the same way I feel about spring so they're in the mood for new jams. New year, new jams.
The only good part about Denver traffic is that it gives me so much more time to listen to my sons while driving. Driving, music. Running, music. Work, music. My co-workers have heard me sing all day every day before. I'm not ashamed, even if I am a little tone deaf, okay maybe a lot. Last weekend we had some amazing temps so Adam and I made cocktails on the patio with an amazing Spotify playlist of new music. Is there anything better than patio cocktails and great music? Nope.
My friend Alyssa and I are constantly sharing music. Granted, most of the time, she's already heard what I consider new, but she is my go-to for all the newest music. Sometimes, she sends me rap songs called Swalla that I have to question, but 99.9% of the time, I'm obsessed with everything she sends. Just this am, I texted her, "I need new music!" and within 3 minutes, I had 14 new songs to add to my playlist. Shoutout - thanks lys!
You guys can thank her for a lot of the songs on the playlist. Not really the country, those are mine. But I think you'll find an amazing variety to this list. I have a feeling this spring jams playlist is gonna take me all the way through fall.
