Tomorrow is Thanksgiving, hooray! Today I am spending the day with my family, especially my mom, helping her prep for the big day tomorrow. Spending time with my mom is the absolute best. Cooking with her and learning from her is even better. I'm so lucky to have a mom who is practically Martha Stewart.
Every since I can remember my mom has always hosted Thanksgiving. I honestly never remember being any where else for Thanksgiving until Adam and I started sharing holidays. My mother is the perfect host. She reminds me of Monica in Friends when Monica "is always the hostess". Lets be real, my mom is the best host, so why go elsewhere.
I am so excited to spend thanksgiving in Arizona. 3 full days of sunshine, family, great food, delicious wine and everyone I love.

For as long as I can remember my mom has always sent Christmas cards. She has a long list of who she's sent too and who she gets cards from. She has a basket that sits in the same spot every year where all the Christmas cards go. I can remember coming home every night and looking through the new cards. I'm partial to the picture cards, but it is so fun getting Christmas cards from people all over and catching up on their lives.
Learning from my mama, I started sending Christmas cards when I lived in Omaha. Nothing super exciting, just a little Christmas stationary to let my loved ones know I was thinking about them. Well, as soon as I got engaged, I knew this was my chance to have a family Christmas (with a picture) card. Needless to say, Adam was less than thrilled when I told him about our Christmas card photo shoot. 1000 pictures later we had the one.
Next, comes the best part. Picking out the perfect card. I could peruse Minted for hours picking the right card. I play with fonts, different pictures and styles. Minted literally has everything I could dream of when it comes to picking the right card. I have personalized stationary (with my new married name), I did our Save the Dates, our housewarming party and all our Christmas cards with them. They do not disappoint.
Here's a preview of our card from last year. Adam was lucky because I used a picture from our engagement picture session so that he didn't have to endure another photo shoot. I mean, how cute is this card and how handsome is my fiance!

Is there anything better than getting Christmas cards?
Ribs are one of Adam's favorite meals. I make them for his birthday, special occasions and random Sundays. When he requested them this past weekend I knew I wanted something spicy, easy to make and easy to prepare. The rub for these ribs is so good you don't even need sauce. Oh my gosh, I could eat them all the time. Enjoy!
Ingredients:

- 4 pounds of ribs
- 1 Tbsp.sea salt
- 1 Tbsp. paprika
- 1 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 1 Tbsp. chili powder
- 2 tsp. ground black pepper
- 2 tsp. cumin
- 2 tsp. cayenne pepper
- Place the oven rack in the middle of the oven and preheat oven to 250 degrees. Combine all spice ingredients together in a small bowl and stir to combine to create the rub.
- Rub both sides of the ribs with the spice rub and place the ribs on a baking sheet, rib side down.
- Bake the ribs for about 2 hours and 45 minutes, turning ever 15 minutes or so. Set the oven to broil and cook the ribs for 5-10 minutes to brown the meaty side.
- Remove from oven and allow to rest for 5 minutes. Slice the ribs and serve.
I bought our ribs at Costco so we could have them for two nights in a row :)

It's time for a birthday post. Today is my older brother Tom's (or Tommy as I call him) birthday! He's the older, cooler Englert that's for sure and he's the first to have a baby, so basically he is winning at life. Ps. You should all go look at this post from last year to see how cool Tommy was when he was little.
Tommy, Happy Birthday! I hope San Fran was awesome and that today you're eating cake and drinking delicious cocktails. I can't wait to celebrate next week! love you! And, now a throwback picture from when we were both younger, prettier, skinner and Tommy was making model faces. Happy Birthday!
You know when your heart is so heavy but you cannot even begin to speak the words to express that feeling? That is how I feel about everything that happened in Paris this past weekend and everything that is happening around the world. As a blogger, having a loss of words is a detriment, but today I think it's a blessing.
My heart breaks for everything going on in this world. All the hate spewed daily, the constant fear that so many people live in. It's devastating. I have no ideas on how to solve this, no words of wisdom to heal the broken hearts of families who lost loved ones. All I know and all I can do is pray. I'll pray for the ones who lost loved ones, the ones who feel pain and the ones who are afraid.
Today there will be no funny jokes, no recipes, no stories from the weekend. Today is dedicated to Paris and everywhere else dealing with daily acts of terror, days filled with fear and grief. My prayer is that we all come together and figure this out. How? I don't know, but that's what my prayers are filled with today. May God Bless and continue to bless all those lost, Paris, the United States and everywhere else.

When I was in college, two girls I went to Pepperdine with started the Kind Campaign, a campaign dedicated to ending girl-on-girl bullying. Today, they have turned Kind Campaign into a world-wide campaign that spreads kindness, love and awareness. Side-note - go check them out, join the movement and start spreading kindness.
I have to be honest, while I've been bullied, I've also bullied. It's something I'm not proud of, but the reality of it is that most girls in their life have been the cause and the victim. But the best part, we can change it. We have the power to change it and change the lives of young girls and boys everywhere.

- Students who bully others are at increased risk for substance use, academic problems, and violence later in adolescence and adulthood.
- Students who experience bullying are twice as likely as non-bullied peers to experience negative health effects such as headaches and stomachaches.
Don't those statistics make you feel crazy? Don't those statistics scare you? I don't have kids yet but it terrifies me to think that one day when I do, they'll have these odds stacked against them.
This is why World Kindness Day is so huge. We have to help kids feel loved and encouraged and accepted! Today I'm vowing to complete a random act of kindness every hour (that I'm awake). Be that a text, a phone call, a hug. It's our job to spread kindness and it's so easy!
I hope you join me in spreading kindness, it's the simplest thing but it's so overlooked. Let's dedicate today (and everyday) to being kind.

The love I have for our veterans is so immense, when I think about their sacrifice it brings me to tears. The gratitude I have for our veterans is impossible to put into words, but since I'm a blogger, I will try.

Today is also my sister-in-law Brooke's Birthday! I got very lucky when I married Adam in that I married into two wonderful sisters, Brooke being one of them. She is kind and loving and hilarious and I'm so lucky to have her in my life.

It's no surprise I love sandwiches and it's no surprise I love the crockpot. Combining the two? Jackpot! This past Sunday was one full of errands, nail appointments, Pure Barre and grocery shopping. The crockpot was my solution to this super busy day and pulled pork sandwiches were on the menu!
I love this meal, but to prepare the way I love it, I made my own BBQ sauce, found here and my own bread rolls, here. It seems like a lot of work, especially making it easy with the crockpot, but I promise homemade is the way to go!

Ingredients:
- 4 pounds pork shoulder
- 3 tablespoons smoke paprika
- 1 tablespoon sea salt
- 1 and 1/2 tablespoon chili powder (reduce for less spice)
- 2 tablespoon ground cumin
- 1 tablespoon black pepper
- 1 tablespoon dried oregano
- 2 teaspoon cayenne pepper
- 1/4 cup beef broth
- 4 pieces of bacon (secret ingredient)
- Lay pieces of bacon on the bottom of the crockpot. Pour in the broth.
- Mix all the spices together. Rub the rub into the meat and into all the crevices.
- Place the meat into the crockpot.
- Cooking options can vary. Either 4 hours on high. 8 hours on low. We did two hours on low, 3 and 1/2 on high.
- When done, shred the pork. Put back in the crockpot, mix with the juices.
- Prepare your sandwich!

What is your definition of love?
When she first sent me this text, my response was "unfailing and forgiving." I've been married for 6 months today (Happy Anniversary Adam and Happy 5 years together!) and those are the two most wonderful attributes of love I've witnessed and ever experienced. They're small words but they're so full.
- Unfailing: Never changing or becoming weaker even in difficult times: Always providing enough of what is needed
- Forgiving: Willing or able to forgive: Allowing room for error or weakness
If' I've learned anything in 6 months of marriage is that there is always room for forgiveness and always the need for unfailing love. Adam and I have had such a wonderful 6 months. Everyone told us the first year of marriage would be the hardest, well here we are 6 months in and enjoying every minute. Yes there are hard moments, personal failures, knee surgeries, illnesses, but I'd rather do life and all the messiness that comes with it with him than with anyone else.
I then turned the tables and asked Juanita what her definition of love was. Needless to say, this inquisitive mind gave me a bigger answer than I gave her:
It feels like something I can't speak on because I haven't had it but it would be someone I felt completely comfortable with. I could say the things I was thinking without ever regretting telling, saying how I felt and never feeling like I had to change. You feel free but you always have someone on your team and if life was musical chairs (the most stressful of all games) you would get to know that no matter what happens while the music is on, when they turn it off you would always have a hand to hold. It's something that enhances your life but doesn't complete it. Like you could always see blue but now you can see the bluest blue and every variation of it.I mean, this girl is 20 years old. How is she so smart. Her last line really hit me, "It's something that enhances your life but doesn't complete it." I think I'm learning that lesson in all aspects of my life. If I'm not personally self-fulfilled, how can I expect someone else to fulfill me? Happiness is something I create and while Adam gives me so much happiness and joy, I can't expect him to do that for me every day.
I think that's where we as a generation are losing ourselves and losing our love. We expect to be on a honeymoon forever, cue the 72 day Hollywood marriages. As soon as the extreme high ends, so does the marriage. To me, love, marriage, relationship-- its all a partnership. It's a give and take. It enhances your life, but how can we expect another person, who's going through their own ups and down, to be the sole source of our happiness and joy. Love lasts forever. It lasts through the honeymoon stage, it lasts into the "this is the comfortable part of our life stage" and it lasts into the "we've been married for 45 years" stage. Love, to me, never changes, it adapts.
Feeling like I didn't give Juanita enough, I added on to my definition of love.
I have some amazing friends and family that I love a lot. I trust their opinions and I trust their thoughts, so of course I had to reach out and hear their definitions of love. I appreciate their honestly and their hearts. Leaving names out to preserve some anonymity, here are some more definitions of love.Fight for what you believe in, but learn to give some things up. Always say sorry. Don't say things you can't take back. Fight fair, argue fair. Never stop dating your husband. And, sometimes you just have to laugh because it makes things so much easier even when its not easy.
- An unconditional commitment to walk with others with honesty, offering and receiving support, and having room to grow.
- No desire to change the person (growth and development are not change), want true happiness for them regardless of your place in their life, to be with them all the time but to be okay when you're apart -you feel free.
- I think love is a choice to put another persons needs, wants and desires above my own while serving that person daily. 1 Corinthians 13:4-7.
- Love means you would take a bullet for someone else. You value their life more than your own. I feel like love is different for everyone. It's hard, but it's so wonderful and crazy at the same time!
- Love is unexplainable, because I think it is different for every person who has it.

I am loving November so far. Granted I'm only three days in, but I have my holiday flights books, celebrated a birthday, made a delicious dinner and won fantasy football this week. If these last three days are any indication of what November is going to be like, count me in!
One thing that makes the days go faster is a great playlist. I'm partial to Spotify, but hey, jamming out at work in any way makes the day so much better. Hello, don't even get me started on all the new jams (pun intended) that have been released recently. So while I'm counting down the days until Adele releases her new album, I thought I'd share some of my favorite jams.

Happy Tuesday everyone! Did you know today is National Sandwich Day? Which means you can go to Subway and buy one sandwich, get one free. So get out there sandwich people, today is your holiday!
Anyways, arbitrary holidays are my favorite holidays, because they don't involve buying presents, but they always involve celebrating! And, of course, any time I can reference Friends is always a good thing in my book.
I found the recipe for the sandwich bread on Lexi's Clean Kitchen. I think replicating good whole wheat sandwich bread is the hardest part about paleo. I've tried multiple types of bread, some that are so bad I refuse to share them with you. But, honestly, this recipe is really delicious and really easy to make!
Adam's favorite food is sandwiches so he was super pumped when I told him that I was attempting another kind of bread. As always I left the type of sandwich and toppings up to him and this is what he came up with!
Ingredients:
Bread
- 1/2 cup almond flour
- 1/2 cup tapioca flour
- 2 eggs
- 1 tablespoon palm shortening
- 1/4 cu[ unsweetened apple sauce
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- dash of sea salt
- Pastrami
- Turkey
- Salami
- Goat Cheese
- Lettuce
- Tomato
- Red Onion
- Pickles
- Peppercinis
- Dijon Mustard
- Avocado
Bread
- Preheat oven to 350
- In a bowl, combine almond flour, tapioca, baking powder, soda and sea salt.
- Add in eggs, apple sauce and palm shortening. Mix.
- Place greased rounds on a greased cookie sheet. Pour batter into molds, about half way full (depending on how big your molds are)
- I didn't have molds, so thanks to my smart thinking mama, I made some out of tinfoil. They worked great!
- Bake for about 15-20 minutes, until a toothpick comes out clean.
- Slice in half and make your sandwich!
- Enjoy!

- 188 days until May 9, 2016? Okay, that's my one year wedding anniversary and pretty much just a countdown for me.
I can't believe how much has happened in 2015, I cannot wait to see what the last two months holds. Thanksgiving with family, Christmas with family, New Years in the mountains. I have a feeling these last couple months are gonna be good, I can't wait to share it with you guys.
Happy November everyone, now is the time to work on those resolutions you made 10 months ago :) I've got some work to do on those! Like if you guys have any tips to getting Adam to take "fashion" pictures of me, I'm all ears.

Today is Britt's birthday. B and I have been friends for 5 years, we made it through law school together, bar exams, different cities, lots of weddings and lots of laughs. We're such good friends B even got married on my birthday :)
B, Happiest Birthday! I hope you spend your day celebrating, drinking champs, cuddling with Lil, eating cake and opening presents.
