Everyone says it, but can you believe how fast 2015 went? It seems like just yesterday I was writing my year in review for 2014, but here I am, drifting down 2015's memory lane.
Oh, 2015. What a year you were.
Between lay-offs, torn ACL's, delicious recipes, gorgeous weddings, fun honeymoons, failures, successes and everything in between made for a 2015 I certainly wont forget anytime soon.
#bestofnine is currently sweeping Instagram and I'm not one to let trends go by without joining in. Before we start the year in review, here's my best of nine! It appears the winter season pictures are really loved. Thanks for following, liking and commenting :) 2015 really has been one of the bests.

It's time to look back on 2015.
January: I got laid off. Am I allowed to say that? I've never written that out before. But I got laid off in January. But I also made my first patch of paleo bread, saw Sam Smith live, watched a lot of the Bachelor, and did a lot of Pure Barre. Overall, it was a great month.
February: I was thrown a gorgeous bridal shower, went to my best friends gorgeous bridal shower, watched more episodes of the Bachelor and tore my ACL and my meniscus.
March: March was slow. I was a month out from tearing my ACL so it consisted of a lot of surgeon appointments, MRI's and random doctor visits. We sent our wedding invites out and prepped for our honeymoon. I got a wonderful new job (which is still my current job), crafted some delicious recipes, Jamie King re-tweeted me and Whitney won the Bachelor. Wanna know the BEST part about March? My adorable niece was born.
April: April was a really fast blur of a month. Dress fittings, my best friend's bachelorette party and my bachelorette party in Vegas. It was Adam and my one year Denver-Anniversary, we made delicious recipes and enjoyed our last month as an engaged couple!
May: I got married! By far the best month of the year. We spent 6 wonderful days in Arizona celebrating all things wedding. We got married and ventured off to Grand Cayman for the most wonderful honeymoon in the world. Tanned and relaxed we headed back to Arizona for my best friends wedding and my 10-year high school reunion. Oh, what a month. It will be one I'll always remember.
June: June was the calm after the storm. May was the busiest month of my life and in June we relaxed. I turned 28, we celebrated one month of marriage and we settled into life as husband and wife. Wanna know the BEST part about June? My best friend got engaged! Hooray!
July: Adam turned 29, we celebrated the 4th of July in Omaha and I took a blogging hiatus. The blogging hiatus was the best thing I did for myself and this space of mine. I came back inspired, encouraged and ready to write. To celebrate July, you get a delicious picture of my hubs!
August: The hiatus ended and I reintroduced myself to you, my lovely readers. Kids started school, my nephew turned one and we threw an amazing shower for Coti and Matt. The worst part? I had knee surgery. The best part. I started healing. August was good, but I was glad when it was over.
September: Adam and I spent Labor Day in Jackson Hole, Wyoming which is so rad. We celebrated tons of birthdays. I conquered paleo banana bread, got my knee surgery brace off, I had some great guest posters on the blog and we enjoyed fall in Denver.
October: I failed and I found my self worth. I went to Michigan to celebrate family. I saw Taylor Swift with my girls, watched my niece turn three and went to the Denver Beer Festival. I mastered the art of paleo muffins, I co-hosted an Instagram challenge and I figured out what is the most important. It was a month of learning, growing, some tears and a few bottles of wine. I think these months are the most important because it's how you grow.
November: in November, Adam and I celebrated 5 years together and 6 months of marriage. We made delicious food - ribs and again, I mastered paleo sandwich bread. We spent Thanksgiving in Arizona with our family, celebrated World Kindness Day, had a ton of snow storms and I launched my sponsorship program!
December: Adam and I spent a weekend in Keystone, dinner dates with friends, I showed you what's in my bag, we starting looking for houses, I showed you who I think is the most fascinating and we spent Christmas in Omaha. December flies by every year and every year I have all these huge plans, but it escaped me again this year. Now, we're gearing up for New Years and 2016!

Start a blog they said, it'll be fun they'll said, you'll make money they said. Little did I know, when I started my blog over 8 years ago all the struggles that would come with it.
Don't get me wrong, I LOVE blogging. I love it so much I wish I could make it my full time job. But just because I love it doesn't mean its not hard, frustrating and discouraging at times.
I think blogging is the only job (okay, maybe not the only job) but the only job I can think of right now that forces you to watch your Instagram followers like a hawk; down 1, up 4, down 10. Wait, how was I cool yesterday and today you find me boring enough to un-follow me?
Sure, blogging seems glamorous, cue the Lauren Conrad's and Nectar Collective's of the group. While blogging over at Everyday Grace is fun and exciting, it's anything but glamorous [if only you could see my grey leggings that used to be black and my over-sized sweatshirt].

6:00 am: Oh my gosh, did I schedule my post? [runs downstairs, turns on computer, pours a cup of coffee and waits for the computer to warm up...come on come on my fans are waittting] Oh yeah, I did. Whew. Wait, there's a spelling error in the title! Shoot! [corrects post, re-posts the post and heads back upstairs to get ready for my real job]

[Adam can somehow read my thoughts and says no to taking my picture in my new outfit in the snow after work - - it'll be too dark to take pictures anyways] ...on to the next idea.
6:30 am: Showered and getting ready, all while blasting Adele. [maybe I'll do my 5 favorite movies -- everyone likes my arbitrary thoughts on nothing right?] okay sounds good. what are my favorite movies? do I do my favorite dramas? thrillers? funny? comedy? rom-com? Oh man, this list is going to take me days to work out, I have to figure something else out.

7:30 am: Time to take Henry for a walk. Ooo maybe I could do a post on animals. Everyone loves dogs! 10 thoughts while walking my dog. 10 reasons dogs are the best. 8 reasons not to get a dog. [man it's cold, I wish he would hurry up - oh, he pooped]. Yeah, I'll do 10 reasons not to get a dog if you live in a winter climate.
7:45 am: Post today's blog post on Facebook, and in all my blog-growing groups [this group is intimidating - these bloggers are SO good, like why are they one here, they're practically famous] oops, almost forgot Pinterest, Twitter, Instagram and Google+ [ps, did you like all those social media plugs- go follow me, I'm desperate]. Okay, now I have to return comments, likes and re-pin some stuff. [man, these bloggers have it all together - they're posts professional - I'm gonna need another cup of coffee] I need to start taking notes, oh and get better backgrounds for my pictures.
8:30 am: Holy moly I am running so late for work, but wait my outfit is on point. [stands in dim hallway light and tries to take a selfie - to show my face or not too...] Ew, that is ugly. but my followers on Instagram keep fluctuating, maybe they want a selfie picture? Whatever, I'll just post a Starbucks cup again.
side-note: I don't understand how one day I have 1000 followers and the next day I have 994. where are you going?! And Twitter - is this like a game of hide and seek? What is happening here?
9:00 am: I'm finally at work. Time to do work. [I still cant figure out what to post tomorrow, but that will have to wait I guess]
12:00 pm: I'm halfway through the day which just means I'm halfway to having to write a post. I seriously have no idea what to write. Maybe I'll do a google-search of post ideas. whoa - apparently I'm not the only one who's having writers block. [124 blog posts for winter themed posts, 567 post ideas for crafty bloggers, 392 ideas for end of year blog posts.] Ooo this one looks good. #312 - end of year resolutions. I can do this. what do I want to change? lose weight? eat better? travel more?
12:10 pm: Eat my boring lunch (salad, per usual) and back to work.
4:00 pm: One more hour and then doomsday is upon us. But seriously.
5:00 pm: The work day might be over, but the work is hardly over. It's time for Pure Barre.
side-note: this whole full time worker + blogger + person who tries to work out + a husband + preparing dinner + making a clean house is exhausting and I don't even had kids. Sheesh. Anyways focus Kristen - back to Pure Barre.
5:30 pm: Pure Barre is hard. Too bad I already wrote a Pure Barre post. [but... it was when I had a smaller following, and I thought it was pretty good. Maybe I can do a ICYMI post and re-post it? hmm... I've gotta think about that]

7:12 pm: Oh shoot, did I check passionfruit? Did I get any more ads today? I hope I did! [fingers crossed] I mean my littlest ad is only $3. [hint hint hint - enter disappointment when I check passionfruit and there are no ads] ...maybe tomorrow.
7:15 pm: Home, showered, dinner. Should I skip dinner and just try to write this post? Whats more important? My husbands hunger or the post. [we have leftovers, he'll be okay tonight - oh wait, I'll just print a recipe from my blog and he can make us that.]
7:20 pm: Reminder, I need to get better about writing all my posts on Sunday so I can make dinner for my husband during the week [but does that make me less authentic? I usually clean the house Sunday. hmm, decisions decisions]
7:30 pm and a glass of wine: My 12 new years resolutions. [12 is a good number right? 12 resolutions, 12 months. will my readers see the correlation? maybe I should just do 8, 12 is a bit ambitious]
7:50 pm: I am on a roll! 6 resolutions down. okay, now I have to find the perfect picture, write the perfect caption with the perfect font. Thank god for Helene's post on 8 great websites for pictures.
9:00 pm: Okay, the post is ready to post. whew. I think this is a good one. What if people think this is stupid? Is it too late in the year to post resolutions? Too early? Ugh. I don't know, but I do know that I spent all day thinking about this post, it's going up! But what picture do I post on Instagram that relates to this post? [maybe I'll just take one of my legs in bed with a cup of coffee]

#5: Yolanda Foster:
First, YOYO has the most beautiful daughters ever. Second, YOYO used to live in the most beautiful house in the world. Third, YOYO is a RHOBH and she's getting divorced. Fourth, YOYO is my favorite housewife of all time - or maybe she's tied with Heather Dubrow. Fifth, does YOYO have lyme disease? If you watch RHOBH or even if you don't, you know this is the topic of debate this season. She's been sharing her journey with this disease for the past three years via the show and her Instagram. She's had the crowns in her teeth removed, she's been in a cryogenic chamber, she takes thousands of meds a day and she's still struggling. I'm not discounting Lyme disease in any way, but in the words of Lisa Vanderpump, "I'm just questioning it." I'm questioning YOYO and I'm sure the result will be fascinating.
#4: Matt Bellassai:
If you haven't heard of or watched Matt Bellassai's videos yet, you are missing out. He is the face behind Whine About It, a (Buzzfeed) weekly video series where he gets drunk at his desk and complains about stuff. I for one cannot imagine how awesome this job must be. But Matt can and he is basically the most hilarious person ever. He says everything you're thinking but he's funnier. One of my favorite is "Questions about people who go skiing and he tells people that skiing is basically freezing lunges. Go watch him now.
#3: Trump:
Trump. Donald Trump. The Donald. Make America Great Again. I think it's safe to say Trump is a big personality with even bigger statements. While I'm all for "making america great again" I'm not exactly sure he's the way that's going to happen. I don't think that there is any debate that Trump is keeping this whole Running for President thing pretty dang interesting. Either way, good, bad, ugly or orange, he is definitely fascinating.

#girlboss. #hilarious #futurebff. Amy Schumer is killing it right now. She has a hilarious movie out, Trainwreck, her own HBO stand-up and she's best friends with Jennifer Lawrence. The best part about Amy is that she's confident. And on top of that, she's independent, funny, smart, witty, beautiful and all around someone probably everyone wants to know. Oh and don't forget when she was on the red carpet and pretended to faint in from of Kim K and Kanye. Can you imagine what dinner with her would be like? Fascinating, I can guarantee it.

She's gonna be the person that everyone is talking about in the years and years to come. Our kids will know her name. Not only is her voice the best ever, so is her eyeliner. If 2015 is any indication of what 2016 is going to be like for Adele, I can 100% guarantee it's only going to get more fascinating.

Without further ado, the recipe.
Ingredients:
- 1 pound of salmon
- 2 tablespoons organic stone ground mustard
- 1 tablespoon organic maple syrup
- garlic powder
- onion powder
- salt and pepper
- Preheat oven to 425 degrees.
- Lay salmon skin side down on a baked sheet covered with foil.
- Sprinkle salt, pepper, onion powder and garlic powder.
- Mix the mustard and maple syrup together and pour on top.
- Cook on middle rack for 10 minutes (time depends on thickness of salmon)
- Turn on broiler and and cook for another 3-4 minutes until golden brown.

I thought last year had a lot of interesting people. I mean, in 2014, Cailtyn Jenner was still Bruce Jenner, Blake Lively's baby was still in utero and the Duggars were still holier than thou.
Crazy to think what's happened in a year. 2015 sure didn't disappoint when it came to scandals, affairs, nude pictures, marriages and crazy antics.
Barbara Walter's Most Fascinating People list always makes me laugh because, really Bernie Sanders, Barbara? Of all the people in this world you thought Bernie deserved to be fascinating? Anyways, while Barb and I don't always agree, Barb can keep doing what she's doing, but today it's about my most fascinating people of 2015 list.

#10: Leah Remini:
First, she challenged the church, then she challenged Tom Cruise. This girl is either the dumbest person alive or the bravest - - and I'm going with bravest. She left a church after 30 years because she felt it wasn't right, she stood up to the church and as a result has been shunned, called a liar and ridiculed. And on top of that, she has a hilarious TV show that shares her love of her family. This girl is bold. And, if you don't want to look to or you disagree with her recent success, I suggest taking a look back to her role on Saved by the Bell. I think we can all agree that Leah has had quite a fascinating career and it doesn't seem to be slowing down any time soon.
#9: Kylie Jenner:
Lip injections, lip kits, dealing with a new dad, Tyga, Lamborghinis and life as one of the most famous celebrities in the world. I have to preface with, I am not a fan of the Kardashian/Jenner clan, but my dislike cannot take away from the fact that the life Kylie lives is pretty fascinating. She's an 18 year old who's been in the public eye since she was 10. She has 45.4 million followers on Instagram while I'm dying for 1000. She has 12.9 million followers on Twitter and she has an app that will rack in $15 million in it's first year. She's dealing with Bruce becoming Caitlin, Kris and Bruce divorcing, all while dealing with normal 18-year old girl problems (as if those aren't enough!). I don't love the girl, but I gotta give her some credit. She's fascinating.
#8: Josh Duggar:
Hard to believe that last year Josh Duggar was on this list because he was a good person. Oh how things can change in a year. First, news breaks that Josh touched 5 young girls when he was a teen. Second, we find out that those young girls were his sisters. Third, two months later, Ashley Madison is breached and all the world finds out that not only did Josh Duggar have an account, but he admitted to cheating on his wife multiple times and being addicted to porn. Safe to say, Mr. Duggar has fallen from grace and I cannot lie, I find the hypocrisy pretty fascinating.
#7: Ronda Rousey:
This girl is the definition of a bad ass. I don't know much about MMA, but I do know that if you can knock someone out in 14 seconds, you're pretty good. She's the #1 female bantamweight fighter in the world, so I think that makes her awesome. She's paleo - whoop whoop! And she wrote a book called My Fight, Your Fight where she gets down and dirty about her life. This girl is a fighter and even though she got knocked out in her most recent fight, that doesn't keep her off this list of fascinating people.
#6: Pope Francis:
Pope Francis is the 266th and current Pope of the Roman Catholic Church. He's the first Pope from Latin America, Buenos Aires to be specific. He's the first Jesuit Pope and he's 76. So those are his stats, but ya know what makes Pope Francis really cool? He speaks tolerance and inclusion. He leads by example. He gives love and shows love to everyone. He used to be a bounce at a club. He speaks three languages and loves wine. He has over 8 million twitter followers. He loves soccer and selfies. He's make the Catholic church, God and religion accessible to people who have either never been interested or who have been shunned. The way he "popes" (can I make that a verb) is fascinating and he's doing an incredible job.

It has been a long time since I've done a Currently post. I think these posts are so fun because they're a good way to get to know the blogger a little better, plus its so fun for me to catch up on life. So much is happening/going on currently that I thought a little update was necessary.
Loving: Christmas decorations - all the lights, sparkly things and candles that smell like cinnamon. Adele, every song on her new album and her special on NBC. My husband of 7 months. Henry and his aversion to all the snow. Oh, and red wine - cuz its the holidays.
Reading: For the Love - Fighting for Grace by Jen Hatmaker. Its this super honest look at lifes joys, struggles and heartbreaks. ITs about how we deal with ourselves and other people and how not to compare ourselves. And it is so hilarious too. I highly suggest it!
Watching: Big Bang Theory, Quantico, RHOBH, Vanderpump Rules, Chicago PD, Chicago Med and Chicago Fire. I'm a huge TV addict if you cannot tell. Glass of wine, blogging and my favorite shows and I am all set.
Anticipating: Well, huge news, we put in an offer on a house yesterday, so we're hoping we get it! Christmas is in a week! New years is in 2 weeks and then its 2016! There are a lot of fun things I'm anticipating.
Listening to: Adele. Adele and Carrie Underwood.
Planning: Trips to Omaha and Phoenix for baby showers. Phoenix for wedding showers. Virginia for a WEDDING and Tahoe for a family reunion. I'd say 2016 has a lot to plan for and look forward too!

What's going on with you? What are you currently loving?
Its that time of year, everyone is making delicious desserts, cocktails and toasting to the New Year. Did I mention the delicious desserts? While I try to stay away from desserts because they're my kryptonite, I couldn't resist these delicious little cheesecakes. My sister Natalia came up with this idea for a Thanksgiving treat and as soon as she read the recipe, I knew we had to make them.
3 Tbsp granulated sugar
7 Tbsp salted butter, melted
1 1/2 cups granulated sugar
3 Tbsp all-purpose flour
4 large eggs
2 tsp vanilla extract
1/2 cup sour cream
1/2 cup heavy cream
Caramel Sauce:
1 1/2 cups granulated sugar
1/4 cup + 2 tablespoons water
6 tablespoons salted butter
3/4 cup heavy cream
sea salt for sprinkling
Strawberry Sauce:
1 pound fresh strawberries
2 tablespoons granulated sugar
2 teaspoon fresh lemon juice
The original recipe calls for making one big cheesecake, but we decided that little bite sized cheesecakes are cuter and so much easier to eat.
The best part about this recipe? The homemade caramel. I've never made my own caramel before I found it surprisingly easy and so much better than the fake stuff. We made half caramel sauce cheesecakes and the other half with strawberry sauce.
Ingredients:
Cheesecakes:
2 cups finely crushed graham crackers3 Tbsp granulated sugar
7 Tbsp salted butter, melted
1 1/2 cups granulated sugar
3 Tbsp all-purpose flour
4 large eggs
2 tsp vanilla extract
1/2 cup sour cream
1/2 cup heavy cream
Caramel Sauce:
1 1/2 cups granulated sugar
1/4 cup + 2 tablespoons water
6 tablespoons salted butter
3/4 cup heavy cream
sea salt for sprinkling

1 pound fresh strawberries
2 tablespoons granulated sugar

What's your favorite holiday treat?
Cheesecake:
- Preheat oven to 350 degrees.
- In a mixing bowl, whisk together crushed graham crackers with 3 tablespoon granulated sugar.
- Pour in melted butter and stir mixture until evenly coated.
- Divide graham cracker mixture among 24 paper lined muffin cups.
- Press mixture into an even layer.
- Bake in preheated one for 5 minutes. Remove from oven and allow to cool while you prepare filling.
- In a small mixing bowl, whisk together 1 1/2 cups granulate sugar with 3 tablespoons flour until well blended.
- Add softened cream cheese to a separate mixing bowl and pour sugar mixture over the top.
- Blend mixture on low speed until smooth. Mix in eggs one at a time and blend on low speed.
- Add vanilla, sour cream and heavy cream and mix until combined. Tap mixing bowl against the counter to release air bubbles.
- Divide mixture among muffin cups filling each cup nearly full.
- Bake in preheated oven 20-23 minutes until the centers are still jiggly. Don't overcook or they will crack.
- Remove from oven and allow to cool 1 hour. Cover loosely with plastic wrap and trasmfer to refrigerator and chill two hours
- Serve chilled with a spoonful of Salted Caramel Sauce or Strawberry Sauce.

Salted Caramel Sauce:
- Pre-Gather all your ingredients. This moves fast!
- In a heavy-bottomed 3-quart saucepan, heat sugar and water over moderately high heat, whisking constantly to dissolve sugar. Once mixture reaches a boil, stop whisking and allow mixture to boil until it reaches a dark amber color, carefully swirling pan.
- Once mixture reaches a dark amber color, immediately add butter and whisk until butter has melted - then immediately remove from heat.
- Wait three seconds then carefully pour in cream and immediately whisk to combine.
- Whisk until mixture is smooth.
- Allow caramel to cool several minutes then pour into a glass jar to cool.
- Spoon over cheesecakes and sprinkle lightly with sea salt.
be patient with the caramel, it's worth it!
Strawberry Sauce:
- Combine all ingredients in a food processor and pulse until well chopped and mixture is beginning to break down and liquefy.
- Transfer to an airtight container and chill for 30 minutes until ready to serve.

Happy December everyone! Can you believe it is December 10th already? This is how I know I'm not the best blogger because my Happy December post is being posted on the 10th and I still have yet to share a gift guide with all of you. Let's be real, while I LOVE looking at gift guides, I can't create one. Maybe it's not that I can't, I just don't want too. Anyways, it's the middle of December, we are 15 days away from Christmas and I've over here still trying to figure out how to slow time down.
I had all these huge plans for "the holidays." Bake cookies all the time, watch every Lifetime and Hallmark Christmas movie, watch Elf at least 15 times, drink Baileys on ice. Where is the time going!?
I still haven't mailed my Christmas cards yet.
Anyways, it's December so therefore this post is technically a throwback. I had the best Thanksgiving and I want to share it with all of you. Adam and I ventured to Arizona for Thanksgiving and had the best time eating dinner outside, taking too many photos and enjoying time with our family and friends.
I wish holidays lasted for so much longer than they actually do.
