Paleo Energy Balls. Cue the jokes about deflate-gate, the Patriots and Tom Brady's claim that "he likes the balls the way they are," cuz let's be honest, I'm sure Tommy would like these balls too and I promise they are not deflated.... Okay enough with the corny football jokes, back to the cooking.
If you're new around here, Adam's biggest issue with the paleo lifestyle is the lack of snacks. Back in the day, pre-paleo, snacks were abundant. Chips and salsa, cereal, popcorn, you name it, Adam loved it. Paleo makes snacking a little more difficult, so I knew when I found this recipe, it would be an instant hit! These are so easy to make, and so damn delicious. Next time I might even get a little crazy and press them into bars! (They might just be better than Lara Bars, can you believe it?!) We finished these babies off in 4 days, so maybe next time I'll double the recipe!
Enjoy peeps! I promise yo'll have energy for hours after eating one of these!

Ingredients:
- 1/2 cup almonds
- 1/2 cup cashews
- 1 1/2 cups Medjool dates, pitted
- Juice from 2 limes
- 1/2 cup unsweetened coconut
How to Make:
- Add the almonds and cashews to the bowl of a food processor. Pulse until nuts are finely chopped (but do not pulse too long, you do not want the nuts to turn into a paste).
- Add the dates, lime juice and coconut. Pulse until the dates are finely chopped and the mixture starts to clump.
- Shape the mixture into 1 1/2 inch balls.
- Store in an airtight container in the refrigerator.
make sure you don't over process!
Enjoy everyone, they're amazing!
Happy Friday Everyone! I hope you had a great week (and that it went by fast!). I am SO happy it's finally Friday and the weekend is here. Because it's Friday and because I love guest posts, here is one from one of my best friends. Carly was my roommate all through college and now bridesmaid. She's hilarious, sarcasic, sweet, kind and gorgeous. Anyways, get ready to laugh until your abs hurt, without further ado, Carly's guest post, There's no pink in football.
It’s football season. And it’s awesome?
I love a good Thursday night football game as much as the next girl, but if we’re being honest football season is a time of struggle. Passing up the queso dip every freaking weekend starts to wear on a person. The weekly reminder of how much I wish I liked beer gets me down. And I miss my husband.
But that’s not even the worst of it. Let’s talk about females during this time of year. What are you doing girl in the pink bedazzled Tom Brady jersey? You need to reevaluate your life. If you were not born in the northeastern corner of the United States, then you had better have a damn good reason for being a diehard Patriots fan, and no, it cannot have anything to do with Gisele.
As far as I’m concerned, there are three types of girls in this world. The ones who talk off sides and Manning brothers pretending to know what the hell is going on, the ones who don’t even pretend to know what’s going on so they buy a belly-jersey three sizes too small and drink beer at the bar, and the very few who actually know what they’re talking about and thoroughly enjoy watching ESPN instead of Real Housewives. In my opinion, they’re all equally annoying.
Can we all just agree to give this sport to the guys and gracefully sit with a cocktail not having to chime in after every dropped pass? If you’re screaming obscenities with every touch down, you’ve had too much to drink anyway and that’s not cute no matter what sport you’re watching. It’s okay to not have any NFL apparel to wear on Sundays and it’s okay to not like beer.
Loving: college football, NFL and fantasy football.
Reading: Emily Giffin "Where we belong"
Watching: X Factor. 2 Broke Girls and Football (duh).
Anticipating: Birthdays, babies, thanksgiving and christmas.
Listening to: Still not over Carrie Underwood's Blown Away album.
Planning: A surprise for Adam for our two year anniversary :)
Working on: Being as good of a friend, daughter, sister and girlfriend as all those counterparts are to me.
Favorite quote: In French, you don't really say "I mis you." You say "tu no masques,' which is closer to "you are missing from me." I love that. "You are missing from me." You are a part of me, you are essential to my being. You are like a limb, or an organ, or blood. I cannot function without you.
