Happy Monday! Today is running a little slow for me today. After a long weekend in Vail (ps follow me on Snap for the fun stuff - @kgrace01) I am tired. Dragging a little bit. But I have the best recipe for you tomorrow and then a Vail recap tomorrow! Get excited!
Anyways. I love being the hostess. I love hosting dinner, lunch, wine nights, cookie nights, study parties, you name it I will host it. There is something about having all your friends and family at your house that makes things like that so special. I am definitely the Monica of my friends. While I wish I was more like Rachel from Friends, I am 100% Monica. And if you don't know who Monica is... I advise a little Netflix and Chill session for your future.
Wikipedia describes Monica as, "a very organized character with a signature Type A personality who enjoys being in charge, Monica is known for being a "neat freak" obsessed with cleanliness – especially when it comes to maintaining the impeccable condition of her apartment –neurotic, extremely obsessive-compulsive, and competitive in nature, personality traits that are exaggerated for humor and comic relief; The character is also the loudest of her friends."
A neat freak, competitive and enjoys being in charge? Oh, and I love hosting. I wish my traits were exaggerated for humor... buttttt -- don't get me wrong, I love going to my friends houses but there is something about hosting that just gets me excited.
In the last few months, a group of us have started a dinner club group where once a month (or more) we get together at someones house and eat, drink and catch up. The hostess makes the mail course and everyone else brings sides, wine, basically whatever they want. This month dinner club was at my house except it was breakfast because the Bronocs were playing (and won!).
Ever since Adam and I met, his mother made the most amazing breakfast casserole. We'd eat it on Sundays when at the lake, Christmas morning, bridal brunches, baby showers and more.
Any time there is an event before 1pm, a breakfast casserole is the best dish. I knew this breakfast casserole would be perfect for our breakfast club because I could prepare it beforehand and then get to hang out with my friends instead of tending to the food the entire time.
Attention: this casserole takes 90 minutes to cook - don't be like me and forget that small detail.

The hash-browns and the mixture. Ya gotta trust me, it turns out to be amazing!
- 24 ounces frozen potatoes - I use a frozen bag of hash browns
- salt and pepper
- 12 eggs (or up to 16 depending on how eggy you like it)
- 2 cups half and half
- 1 teaspoon season salt (the secret best ingredient!)
- 2 cups cheddar cheese, grated
- 2 cups pepper jack cheese, grated
- 2 cups (1 package) precooked jimmy dean skinless sauces, cut into bites
- Optional: cholula
- Turn oven to 350 degrees.
- Grease a 9x13 inch pan. Add the potatoes to the bottom of the pan, sprinkle with salt and pepper.
- In a large bowl, beat the eggs, then add the half and half, season salt, both cheeses and the sausage.
- Pour egg mixture over the frozen potatoes.
- If preparing ahead of time, cover with foil and refrigerate for 2 hours.
- If ready, bake for 90 minutes. I cover it in foil for the first half and then take it off for the second half. I love it a little browned. Let sit for 10 minutes.
- Enjoy!

This recipe was inspired from Lexi's Clean Kitchen (are you surprised?). Her recipe is in black and my additions are in red! Adam and I made this for dinner one night and it was SO delicious and very filling, the perfect dinner after a long day and a big workout.
Ingredients:
Ingredients:
- 1 pound ground turkey - Bison
- 1 cup salsa of choice
- 6 eggs
- Half of an onion, diced
- 1 jalapeno, diced
- 1/2 teaspoon chili powder
- Heat oven to 350 degrees
- Place turkey in skillet
- Cook until turkey browns
- Add in salsa and mix to combine.
- Make little divots with a spoon, crack in eggs
- Put entire pan in oven and cook for 15 minutes or until eggs are desired yolkiness
right before going in the oven.
oh man, oh man, next time i would take my cook time down about 3 minutes to have the eggs a bit runnier.

Overnight oats, I’m sure you’ve heard of
them, as they are currently all the rage, but have you tried them? I’ve been
reading about overnight oats on every blog, in every magazine and all over
cooking shows for the past 6 months, so I knew I had to try them! I know what you're thinking... Kristen, these aren't paleo! I know, I know, but they're healthy and delicious and I couldn't resist!
I made these
last Friday to make breakfast on Saturday a little easier and let me tell you,
they were fantastic. I looked around online for all types of recipes and after
finding tons of different recipes, I mixed and matched the recipes I liked the best to come up with this one!
Because it was Saturday, I made two bowls, since apparently I was going for
fiancé-of-the-year that day. Based on my fiancé's reaction when I served them, I think I’m going
to win! I hope you all enjoy these oats as much as I did.
Ingredients:
- 1/3 cup Steel cut oats
- 1 tablespoon chia seeds
- 1/3 cup plain greek yogurt
- 1/3 cup almond milk
- ½ banana
- 2 handfulls of bananas
- handful of cranberries
- 1 teaspoon cinnamon
How to Make:
- Mix together all the ingredients.
- Cover and place in the fridge overnight (or at least for 2 hours).
- In the am, top with sliced strawberries, some extra blueberries and maybe, if you're feeling frisky, some warmed up almond butter.
- Don't forget the delicious coffee!
- Enjoy!
I used Bob's Red Mill Gluten Free Oats
And... I used Bob's Red Mill Chia Seeds!
And, almond milk. You could use coconut milk if you prefer.
