Happy Friday! How the heck are ya guys?
Is it just me or is December flying? This week especially. Even with working from home, it seems like there is never enough time to make dinner. Adam and I had something every night this week; from junior league to Adam's work christmas party. It's all fun and games until you realize that every night we ate out. This goes against everything we try to plan for on Sundays.
I've been looking for easy, quick and healthy meals to make Adam and I when they're isn't enough time for an elaborate meal. In comes Coastal Range Organics. Coastal Range Organics chickens and turkeys are raised on a fully organic diet with all-natural, 100% vegetarian grain feed. No animal by-products, no pesticide and all free-range.
Finding all that in frozen food is so hard. But luckily, Coastal Range Organics does just that and in tons of variety. I am obsessed with their chicken burger patties. We make them at least once a week. This last week, I sliced them up and threw them on top of a salad. PS. I was paid for this post, but trust me, my opinions are my own and my love of this chicken is real.
Take my word - there is nothing better after a busy day then going to your freezer and throwing together a delicious healthy meal in under 12 minutes.
The coolest part about Coastal Range Organics is the variety of options like crispy strips, buffalo wings, chicken nuggets, grilled breast strips, and chicken burgers. We've tried the buffalo wings and chicken nuggets and guys, they are so delicious.
Here are all your options:
We've tried 4 of the 8 varieties and have not been disappointed. If you ask Adam, I think he'd tell you, the burgers are the best. You can either bake them in the oven, throw them in the micro or saute them. I threw them in with a little olive oil in a frying pan and cooked them until hot.
BURGER: Throw them on some lettuce (paleo) or a bun, top with cheese (not paleo) and add all the good toppings. I love adding a fried egg with lots of cholula and bam, dinner is served in under 15 minutes. You can thank me after you try all these delicious options.
SALAD: Lettuce, tomatoes, red onions, sliced almonds, delicious dressing and sliced chicken. Do it.

Recipe [Recreated] is the newest addition of "themes" over here at Everyday Grace! I follow a lot of blogs that post delicious meals and I want to be able to share those meals with you.
Recipe [Recreated] will be recipes I have discovered from other blogs/books/ect and have not created on my own. With all of the Recipes [Recreated], I have done something a little different; added my own flair, but the idea/suggestion comes from someone else.
Reason ONE for doing this is I want to be honest with you about where and how I come up with recipes and TWO I want to give credit where credit is due! I never want a blogger/chef to feel slighted.
It's all about sharing the love people!

Burger:
- 1 pound ground beef
- half of a yellow onion, diced
- 1 clove garlic
- 1 large egg
- 1 teaspoon chili powder
- 1 teaspoon cumin
- pinch of salt and pepper
Toppings:
- 2 tablespoons olive oil
- 2 large shallots, diced
- 1 cup crimini mushroom, sliced (mine and Adam's fav!)
- 4 eggs
- 1 batch truffle aioli (mayo (paleo) and truffle oil)
- prosciutto (so much, so good)
- salt and pepper
- tomato
- avocado
How to Make:
- In a large bowl, mix all burger ingredients until combined. Make as many patties as you like. (Making the toppings took me a while, so I threw them in the fridge until I was closer to being done).
- Add a tablespoon of oil to a saute pan, medium heat. Add the shallots and cook until clear (about 4 minutes). When clear, add the mushrooms and cook until tender.
- Cook the burgers. I cooked mine on the stove because it was 105 degrees out and Adam didn't feel like grilling.
- While cooking, cook eggs over easy. Adam doesn't LOVE runny eggs, so he left an egg off his. I loved my egg.
- Make the burgers. Burger, aioli, shallot/mushroom mixture, avocado, prosciutto, and of course the egg.
- Enjoy!

I wish I could say every night I made a new fabulous paleo recipe and it was great and delicious and life changing. Unfortunately life, jobs, working out, Henry and everything else in the world gets in the way of creating and making new recipes. Thankfully, I've got some go-to recipes that are amazing.
The other night after a long day of work, work outs, laundry and cleaning the house, the last thing I wanted to do was prep a big meal. This is one of our (easiest) and favorite recipes.
