Recipe: Callie's Paleo Chocolate Banana Muffins!

Wednesday, October 22, 2014

Adam and I are always looking for new breakfast options, so when Callie told me about these, we knew we had to try them! They're super easy to make and oh. my. gosh. they are so delicious. I hope you all enjoy!

Ingredients:
  • 3 ripe bananas
  • 2 tablespoons coconut oil, melted
  • 1/3 cup maple syrup
  • 2 tablespoons honey
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup almond meal
  • 1/4 cup coconut flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup mini chocolate chips (for paleo, make sure they have no added sugar or milk!)
How to Make:
  1. Heat oven to 350 degrees.
  2. Line a muffin tin with papers.
  3. Beat the 3 ripe bananas with a mixer until well blended and no chunks.
  4. Add the coconut oil, maple syrup, honey, egg and vanilla, mix on medium.
  5. Add the almond meal, coconut flour, cocoa powder, baking soda, baking powder and mix on low.
  6. Stir in the chocolate chips.
  7. Spoon the batter into the muffin tins.
  8. For extra, sprinkle chocolate chips on top!
  9. Bake for 18 minutes (or high-altitude baking for 23 minutes!)
  10. Enjoy!
I used semi-old bananas, just so they were a little softer.
The batter, try not to eat it all before you bake it :)
All ready to go in! I forgot the papers, but I sprayed it.
Thanks for the recipe Callie!

  1. 3 Studies SHOW How Coconut Oil Kills Waist Fat.

The meaning of this is that you actually burn fat by consuming coconut fat (including coconut milk, coconut cream and coconut oil).

These 3 researches from large medicinal journals are sure to turn the traditional nutrition world around!
