My goal with weekly meal plans is to help give you guys a week of recipes with the shopping lists to go with it. I want to give you ideas for meals that even if you don't go with my specific recipe, you know a recipe you can use.
Example - if I say fajitas, you don't necessarily have to use my recipe, but you have an idea for dinner.
Use this as a guide.
One of the comments I get most, is that people cannot believe I cook every night. Let me set the record straight - I cook Sunday - Wednesday and then usually 1 weekend meal. But with that being said, I meal plan every single Saturday, with grocery delivery and/or pickup on Sunday.
I realized, as a working mom, that if I don't do this before Monday, it'll never get done and then we'll be scrambling every night of the week. The best part about meal planning, I have food and meal ideas for the week. If on Monday, I decide to cook Tuesday's meal, then great! At least I know I have all the ingredients ready for whatever meal I've planned for.
Keep in mind, because I'm home on Sunday, I usually pick a "bigger" meal for Sundays. Aka - meals with more prep, because I have the time. My weekday meals are usually a little simpler.
Here's your meal plan and shopping list for the week.
- Sunday: Home made chicken noodle soup with cheese bread
- Monday: Beef tostadas (the recipe I'm using calls for chicken, but I wanted beef)
- Tuesday: Strozzapreti with Spinach and Preserved Lemon (pasta! sounds fancier than it is!)
- Wednesday: Chicken Quesadillas (recipe below!)
- Thursday: Spaghetti Squash Pad Thai
- Friday: Treat yourself, it's time to order out! Friday is our pizza nights!
- Saturday: BLTs - try them with some chipotle mayo, so delish!
Shopping List: Have this open while you online shop for groceries or copy and paste it into the notes on your phone! Keep in mind, you probably have most of this in your pantry/fridge already! I'm just listing all recipe ingredients!
Also, I write my lists in categories of the store (I'm crazy, I know)
- Chicken breasts x 3
- Rotisserie chicken
- Ground beef
- 4 stalks of celery
- 2 carrots x 2
- garlic
- Yellow onion
- Red onion
- Green onions
- Bay leaf
- Baby spinach x 2 (meaning you need it for 2 meals!)
- French bread
- Romaine lettuce, thinly sliced or 1 small head
- Cilantro x 2
- Limes (buy 4)
- Lemons
- Spaghetti Squash
- Mung bean sprouts (if you like them in pad thai, I left out)
- Basil (regular basil is fine)
- Parmesan cheese
- Shredded cheese
- Guacamole
- Ghee
- Butter
- Eggs
- Black peppercorns
- Kosher salt
- Olive oil
- 1 box fusilli noodles
- Strozzapreti noodles (I use Banza noodles for everything)
- Paprika
- Chili powder
- Cumin
- Dried oregano
- Tomato paste
- 4 oz chopped green chilis from a can
- chicken broth
- red pepper flakes
- breadcrumbs
- BBQ Sauce
- arrowroot flour
- Cashews
- Almond Butter
- S esame oil
- Coconut aminos (or soy sauce)
- Fish sauce
- Rice vinegar
- Ginger (buy this like you buy garlic, in a jar!)
- Coconut Milk
- 6 grain free tortillas (I prefer Siete casava flour tortillas) x 2 (again, used for 2 meals!)
Ooohhh! Now this has some heavy calories dear friends, like real heavy calories! It is a 2000 Calorie Diabetic Diet Plan great for the muscular giants to satisfy their hunger cravings and simultaneously maintain blood sugar levels in their bodies if they are diabetic.
