Recipe: Baked Mustard Lime Chicken

The last couple weeks have been so busy, so finding an easy chicken dinner has been imperative. I found this recipe online a while back and I'm so glad I did. It's already become one of our go-to easy chicken (paleo!) dinners.

Ingredients:
  • 1 pound skinless, boneless chicken breasts (I used two packs of Costco chicken so we could have leftovers) 
  • The juice of 2 limes
  • 1/2 cup fresh cilantro
  • 1/4 cup dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
How to Make: 
  1. Preheat oven to 350 degrees.
  2. Combine lime juice, cilantro, olive oil, chili powder, salt and pepper in a food processor. Pulse until combined
  3. Pat dry chicken breasts and place in a 9x13 glass baking dish
  4. Pour marinade over chicken and bake for 25 minutes uncovered. (Mine took about 30 minutes, the chicken was huge!) 
  5. Enjoy! 
I didn't pre-chop my ingredients before placing them in the food processor and it turned out just great!  
All ready to go in! (I put a little marinade under the chicken too!) 
So delicious, and it paired deliciously with my squash from yesterday!
