Ingredients:
- 1 pound skinless, boneless chicken breasts (I used two packs of Costco chicken so we could have leftovers)
- The juice of 2 limes
- 1/2 cup fresh cilantro
- 1/4 cup dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- Preheat oven to 350 degrees.
- Combine lime juice, cilantro, olive oil, chili powder, salt and pepper in a food processor. Pulse until combined
- Pat dry chicken breasts and place in a 9x13 glass baking dish
- Pour marinade over chicken and bake for 25 minutes uncovered. (Mine took about 30 minutes, the chicken was huge!)
- Enjoy!
I didn't pre-chop my ingredients before placing them in the food processor and it turned out just great!
All ready to go in! (I put a little marinade under the chicken too!)
So delicious, and it paired deliciously with my squash from yesterday!
