Recipe: Paleo Beef Stew (fail)

Today, I have beef stew for ya. Adam requested beef stew the other night because it was a cold and dreary day and some hearty stew sounded great. Until it wasn't. Yes, you heard that correctly, this beef stew was not that great. The main issue, the beef was chewy. If you ever tell Costco I said this, I'll deny deny deny, but we bought their pre-cut beef and it was as chewy as chewing gum. The broth and veggies were really delicious, but next time I'd use a different meat. Let me know how you change up the stew and make it great!

Ingredients: 
  • 2 1/2 pounds boneless beef chuck roast, cut into 1 inch cubes
  • salt
  • pepper
  • 1/2 cup red wine
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 yellow onion, diced
  • 2 cups sliced mushrooms
  • 3 carrots, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 whole bay leaves
  • 1/3 cup fresh italian parsley, minced
  • 3-4 garlic cloves, minced
  • 1 healthy pinch of red pepper flakes (I forgot this and I think it would have been so delicious!) 
How to make: 
  1. Season beef with salt and pepper and place in slow cooker. 
  2. In a small bowl, whisk tomato paste into the beef broth. Pour over beef along with the wine. 
  3. Add carrots, onion and mushrooms along with the garlic and remaining seasonings. 
  4. Give the ingredients a good stir, cover and cook on low 4-6 hours or on high 2-3 hours. 
  5. Remove the bay leaves before serving, garnish with fresh parsley and enjoy!
