Recipe: Avocado Chicken

I made the best recipe ever.

I know I say that a lot, but this one really is the best ever. The last month, Denver has been a bit gloomy and cold. For example, in a two day period in April, we had 17 inches of snow. This is not the spring or weather I signed up for,

The last two days, it's been below 50 degrees and raining. I'm complaining, totally. I'm throwing myself a pity party. To get over my pity party, I made a delicious dinner that made it feel like summer.

This recipe has a lot of cilantro in it. Luckily for me, Adam and I love it. But, if you're like my best, Coti - you hate it. Like actually despise it. But, did you know that hating cilantro can be because of your genetics? So, if you hate it, you can blame your genes for that :)

I think this recipe would still be uber delicious even without cilantro. This recipe is perfect for sitting outside with a cold beer enjoying the sunshine.

Ingredients:
Cilantro Lime Chicken:
  • 1.5 lb. boneless chicken breast
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • ¼ cup fresh cilantro
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
Avocado Salsa:
  • 4 avocados, diced
  • ½ cup fresh cilantro, diced
  • 3 tablespoons lime juice
  • ½ tablespoon red wine vinegar
  • ½ teaspoon red pepper flakes
  • 1 garlic clove, minced
  • salt to taste
How to Make: 
  1. To a small bowl, add ¼ cup of lime juice, olive oil, ¼ cup of fresh cilantro, ground cumin, and ¼ teaspoon of salt. Whisk until mixed.
  2. Add chicken and marinade to a large ziplock bag. Let chicken marinade for 15 minutes.
  3. Preheat grill to medium high heat (about 400 degrees). Place chicken on grill and grill each side for 4-6 minutes, until chicken is no longer pink. Remove and let sit.
  4. To make the avocado salsa: add avocado, ½ cup fresh cilantro, 3 tablespoons lime juice, red wine vinegar, red pepper flakes, garlic clove, and salt to a small bowl. Gently toss to mix.
  5. Top Cilantro Lime Chicken with fresh Avocado Salsa.
 Try not to eat all of this before you put it on the chicken. 
Isn't uncooked chicken the ugliest. 
yep yep yep. so delicious. 

I don't think Adam and I spoke the entire meal because we just scarfed chicken. It's that good and fresh. Oh man, oh man. 

And, I'm planning on making this Sunday when the weather is actually nice and we can grill the chicken. Stay tuned.

  7. Avochicken has been a favorite of ours for a while now--it's such a refreshing way to eat chicken that isn't too heavy or anything. It's perfect for summer, too!
