Recipe: Blueberry Crumble

This is perfect when you're craving something sweet & paleo! It was super easy to make and super easy to eat! Next time I'm going to sub the blueberries with raspberries or peaches because yum! Enjoy!

Ingredients: 
  • 2 pints fresh blueberries
  • juice of 1 lemon
  • 1 cup almond flour
  • 1/4 cup chopped macadamia nuts
  • 1/4 cup melted coconut oil or ghee 
  • 2 tablespoons maple syrup
  • 1/4 teaspoon cinnamon 
  • 2 pinches of sea salt
How to Make: 
  1. Preheat oven to 375. 
  2. Place blueberries in a 9x9 inch baking dish and squeeze the juice of half of the lemon over the blueberries. 
  3. In a mixing bowl, combine the almond flour, macadamia nuts, melted butter, juice of half a lemon, maple syrup, cinnamon and salt. 
  4. Spread the topping over the blueberries. Bake until the fruit in well cooked and the topping is golden brown. (about 30-40 minutes). 
Make sure to toss the blueberries in the juice!

hint, if you want more crust, maybe double the mixture!
