Recipe: Sweet Potato Brownies

Okay, total honesty. When I first saw this recipe I thought to myself, how could these possibly be good. 1. They are made out of sweet potatoes. 2. There is NO sugar in them! 3. There is hardly any flour. 

But, let. me. tell. you. These are amazing. You would never know they were made of sweet potatoes. I promise, I made Adam try them before telling him the ingredients and he had no clue! The recipe calls for melted chocolate on top, but we mixed it up and put some almond butter on top. I wish i could put almond butter on everything, it's so delicious, and even better on a warm brownie!

Ingredients:
1. 1 medium raw white sweet potato, peeled and grated (using the larger holes of the grater) - 2 to 2 1/2 cups of shredded sweet potatoes 
2. 2 whole eggs 
3. 2 tsp vanilla extract (the real kind) 
4. 1/2 cup of raw honey, melted in the microwave if it’s too thick 
5. generous 1/2 cup of virgin olive oil 
6. 1 heaped tbsp of gluten free baking powder 
7. ½ tbsp of baking soda 
8. 1 cup of unsweetened cocoa powder (reduce that amount if you prefer a milder chocolate flavor) 
9. 2 tbsp coconut flour
 I could eat that raw honey with a spoon its so delish, I don't, but I could... 

this turned out to be wayyy to much sweet potato, but the grater was perfect for it
all ready to go in the pan and then in the oven, I can almost smell the deliciousness. 

How to make: 
1. Preheat oven to 365 °F.  
2. Combine grated sweet potato, eggs, vanilla, honey and olive oil in a large mixing bowl and stir together until well mixed. Then add baking powder and baking soda and stir.  Add cocoa powder, mix and finally add coconut flour. Avoid adding too much coconut flour as it will absorb too much moisture which will result in drier brownies. 
3. After stirring everything together, pour the mixture into a greased baking tray greased.  
4. Cook for 25-30 minutes. Remove the tin and cool for 5-10 minutes before carefully removing the brownie cake form the tin.  
5. Then, the fun part, slather the brownie with almond butter, melted chocolate, raw honey, did I say almond butter? Maybe throw some raspberries, strawberries or blueberries on top and try not to eat the whole thing in one bite!
