The mystery that is Ghee

Ever since I started paleo, I've read multiple recipes that called for Ghee. Well, I either just ignored the recipe entirely or just left out the ghee. It wasn't until I was visiting Arizona that I decided to try it. My mom and I found this brand at Whole Foods. For those of you who don't know what ghee is, it is clarified butter made from the milk of a buffalo or cow. Ghee is made from butter but the milk solids and impurities have been removed so most people who are lactose or casein intolerant have no issue with ghee. It's nice to have something else to use besides coconut oil, since that can sometimes add an unwanted sweetness to cooking. The guy at Whole Foods said its less expensive to make your own, but I'm lazy and just bought this jar. You should try it sometime!
