Ingredients:
- 1 pound chicken breasts
- 2 teaspoons chipotle powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- salt and pepper to taste
- 2 tablespoons coconut oil
- 1 head of butter lettuce
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons chopped green onions (I forgot these!)
How to make:
- Slice chicken into strips.
- Mix together the chipotle powder, garlic powder, onion powder, salt and pepper.
- Mix the chicken into the mix. I just sprinkled in on both sides of the chicken.
- Heat the coconut oil in a large saucepan. Cook for approximately 5-10 minutes, turning the chicken occasionally.
- Serve in the lettuce cups, top with avocado, cherry tomatoes and green onions! Enjoy!
