Recipe: Morning Glory Muffins.

October 17, 2014

Sorry I've haven't been posting about the challenge. To be honest, I haven't really liked the prompts and I haven't felt like writing, so you know what? I haven't. But I have made some delicious paleo grubs, like these muffins. Let me warn you, they required some work, but they were worth every minute. They're so fresh and flavorful, and are a perfect substitute for breakfast.

Ingredients:
  • 2 1/2 cups almond flour
  • 1 tablespoon cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 6 carrots, grated (i used a food processor to make them super small)
  • 1 large apple, peeled, cored and grated (again, use a food processor!)
  • 1 cup shredded coconut
  • 1 cup raisins
  • 3 large eggs
  • 2 tablespoons honey
  • 1/2 cup melted coconut oil
  • 1 teaspoon vanilla extract
How to make:
  1. Combine almond flour, cinnamon, baking soda, and salt in a large bowl.
  2. Add carrot, apple, coconut and raisins and combine well.
  3. In a separate bowl, whisk eggs, honey, oil and vanilla extract together.
  4. Pour this mixture over your dry mixture and mix well (warning, it will be thick!)
  5. Let the mixture sit for about 30-60 minutes
  6. Heat oven to 350 degrees and grease a muffin pan
  7. Spoon out your mixture into the muffin pan and place in the middle of the oven.
  8. Cook for 25 minutes and then start to watch them. For bigger muffins you'll need more time, and for smaller, less time. Check if they're done with a toothpick, no stick & they're done!
  9. Enjoy!
The mixture!
We made medium sized muffins. One full tin and a few more in another tin.
Enjoy!
They're a bit crumbly, but so moist and delish.
