Recipe: Buffalo Chicken Wraps

Sorry I've been MIA. I was too busy enjoying my time in Arizona, celebrating my engagement and spending time with my friends and family. Arizona was great for my paleo diet though. My mom and I had so much fun making all kinds of different meals. One night,  my mom, two best friends and I made the ultimate paleo meal. I know I've said this before, but this was by far the best recipe I've made so far. We decided to make them cut into strips as wraps, but the rub could be put on anything, breasts, thighs, fish, steak. It was so so delish.  Warning, this is spicy. If you're super sensitive to heat, I would reduce the amount of chipotle powder you use.

Ingredients: 
  • 1 pound chicken breasts
  • 2 teaspoons chipotle powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • 2 tablespoons coconut oil
  • 1 head of butter lettuce 
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons chopped green onions (I forgot these!) 
How to make: 
  1. Slice chicken into strips. 
  2. Mix together the chipotle powder, garlic powder, onion powder, salt and pepper. 
  3. Mix the chicken into the mix. I just sprinkled in on both sides of the chicken. 
  4. Heat the coconut oil in a large saucepan. Cook for approximately 5-10 minutes, turning the chicken occasionally. 
  5. Serve in the lettuce cups, top with avocado, cherry tomatoes and green onions! Enjoy!

 hint, get a splash guard, these can get messy 
I used a rack after I cooked them to let the grease drip off
the finished product
