A delicious breakfast solution.

Sometimes breakfast is a battle in our house because lets be real, neither Adam or I like getting up early enough to make bacon and eggs before he has to be out of the house at 7:15. So, I've been searching for something yummy to make that he can take to work with him, and I found it! Introducing lemon blueberry muffins, yum!

Ingredients:
  • 6 eggs
  • 1/2 cup melted coconut oil
  • 1 teaspoon vanilla
  • 1/4 cup maple syrup
  • 1 lemon, juice and zest
  • 1/2 cup coconut flour (next time, i would probably use almond flour) 
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 1 cup fresh blueberries
How to make: 
  1. Preheat oven to 375 degrees. 
  2. Whisk the eggs, coconut oil, vanilla, maple syrup, lemon juice and lemon zest together in a large bowl. 
  3. Sift in the coconut flour, sea salt and baking soda until well combined. 
  4. Gently fold in the blueberries. 
  5. In a muffin tin, scoop 1/4 cup of the batter into each lined muffin cup. 
  6. Bake for 35-40 minutes. (I baked them for about 42 minutes). 
Is there anything better than fresh blueberries?
There was enough batter to do more than 1/4 cup
