Ingredients:
- 6 eggs
- 1/2 cup melted coconut oil
- 1 teaspoon vanilla
- 1/4 cup maple syrup
- 1 lemon, juice and zest
- 1/2 cup coconut flour (next time, i would probably use almond flour)
- 1/2 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1 cup fresh blueberries
How to make:
- Preheat oven to 375 degrees.
- Whisk the eggs, coconut oil, vanilla, maple syrup, lemon juice and lemon zest together in a large bowl.
- Sift in the coconut flour, sea salt and baking soda until well combined.
- Gently fold in the blueberries.
- In a muffin tin, scoop 1/4 cup of the batter into each lined muffin cup.
- Bake for 35-40 minutes. (I baked them for about 42 minutes).
Is there anything better than fresh blueberries?
There was enough batter to do more than 1/4 cup
