Ingredients:
- 2 chicken breasts
- 3/4 cup low sodium chicken broth
- 2 tablespoons raw honey
- 2 tablespoons tapioca flour
- 1/2 lemon, juiced
- 1/2 teaspoon ginger, grated (use the real stuff, not the jarred stuff!)
- 1 teaspoon red pepper flakes
- 1 scallion, chopped
- 1 tablespoon coconut oil
- salt and pepper to taste
- In a saute pan, heat the coconut oil
- Season the chicken with salt and pepper and cut into chunks.
- Add the chicken to the sauté pan and brown, about 7-8 minutes
- Add in the tapioca flour
- Then add the rest of the ingredients and bring to a simmer for about 15 minutes until the sauce thickens.
- Enjoy!
I let it simmer for almost 20 minutes to get the consistency I wanted
